Jay's Jerk Chicken

Absolutely delicious! I usually don't like cold chicken leftovers, because most of the flavor is usually gone, but this chicken was delicous, even cold a couple of days later, and maintained the robust flavor throughout. Moist and juicy, not dried out. I substituted olive oil for the oil, and teriyaki for the soy, and it turned out great. I think I'll make it a little hotter next time though, adding more jalapenos.

Italian Sausage Soup with Tortellini

Absolutely delicious. Got rave reviews from the entire family. I used hot sausage instead of the sweet because we like it a little spicy. Also, I substituted canned chopped tomatoes for fresh. I tried the fresh one time, and it's a lot of work, and in my opinion, not worth the extra effort.

Baked Pork Chops I

Just OK. Nothing outstanding in my opinion. I used boneless pork chops that were a little thick, which could have been the problem. They were a little on the dry side. Probably won't make again.

Roasted Vidalia Onions

Very good flavor, but the onions were nowhere near ready in 15 minutes. I had to put them back in for another 15 minutes, so, for me, it was 30 minutes. Worth the effort though.

Egyptian Feta Cheese Omelet Roll

Based on other reviews, I guess I was expecting too much here. I too added a little oregano, but when all was said and done, it was just OK. Seems like it's still missing something. Probably won't make again.

Boilermaker Tailgate Chili

Very disappointed. I hope he didn't make this down here in El Paso last year when Purdue played in the sunbowl and try to pass it off as authentic. Most of the ingredients are from a can and taste like it. If you want it truly hot, better add more "hot sauce" as he puts it. Not trying to be critical, but this isn't authentic chile. Pass on this and try another chile recipe that has the word "Texas" in it.

Mom's Mozzarella Chicken for Drew

Very good recipe, however I agree with others here that it is critical that you use a decent sauce, otherwise it will taste bland. I used a homemade spaghetti sauce. I also used parmesan cheese over the top of the chicken before I put the mozzarella on. Came out very moist and tasty. Very good if you work it right.

Guacamole

What's the big deal here? This is just a standard Guacamole recipe. Down here in Texas, this is standard fare, so I'm not sure why all the hype. As a matter of fact, what other way would you make it? This is pretty basic folks.

Excellent recipe! My grandmother used to make this when I was a kid, and I haven't had it since then. This is pretty close to hers. Also, someone else suggested putting the batter in a baggie and cutting off one of the corners to squeeze the batter out. I tried this and it works perfectly. Much better than messing with a sticky spoon.

Smoked Sausage-Potato Hash

I'm trying to figure out what the big deal is here. Outside of throwing in an onion and bell pepper, you could serve the two main ingredients (sausage/potato) separately, and it would still taste the same. Doesn't seem like there's any mixing of spices or anything here. Just sausage thrown in with a potato and a little onion and bell pepper. Good ingredients, but not much of a mix to me. Actually, if you scramble in an egg or two, you'd have yourself a pretty decent omelette.

Andrea's Pasta Fagioli

Just ok but still missing something. I followed the recipe to the letter, but there doesn't really seem to be any bite to this dish. The next day, I added some torn strips of pepperoni to it which did add some zip, but overall, I was a little disappointed given all the rave reviews. I will probably make it again, and I'm certainly not a big fan of messing with recipes, but next time I will try to spice it up a bit. Just ok for me.

Excellent dish. Better than most restaurants! I followed the recipe to the letter, and in my opinion, it doesn't need changing at all (except for doubling the sauce, as others have recommended). This one's definitely a keeper!

This was ok but I was expecting a little more based on prior reviews. The marinade was quite good, however the peanut butter sauce just didn't seem to go well with this chicken. Worth trying once, but probably won't make again.

Ranch Burgers

Excellent recipe! However, I agree with many others in doubling the Ranch Dressing otherwise you won't taste it. Trust me, I've made it both ways, and doubling is the way to go. Also, cut down on the crackers (maybe 1/2 of what the recipe calls for) or you'll end up with texture like meatloaf. Use half the crackers and you will get a moist, juicy burger that doesn't taste "mushy".

Restaurant-Style Buffalo Chicken Wings

Very good recipe. I don't like wings, so I sliced up some boneless chicken breasts and they came out just fine. Also, I didn't pour the sauce over them, I put the sauce in a bowl and dipped the breast pieces in it. Much better and not as messy!

Chicken Fried Steak

Excellent Recipe. Meat came out crispy and tender. Gravy was creamy and flavorful. I followed the recipe exactly, except I used a bit more oil because my pan is exceptionally large. This one's a keeper!

Garlic Mashed Potatoes Secret Recipe

This was just ok for me. Somehow it seems like the raw garlic is just too potent for the potatoes. Maybe sauteeing them will make a difference. Might do that next time.
