Crispy Chicken Strips

Very good, but still missing something. Followed the recipe to the letter and it needed some spicing up. The next batch I added a few shakes of garlic powder and some seasoned salt and that did it!

Authentic Mexican Breakfast Tacos

Pretty basic recipe here. Just chorizo, eggs and cheese. How else would you make it? I suspect that all the rave reviews are coming from folks who have never tried chorizo before. If you have, you wouldn't think there was very much to this recipe. Pretty tasty, but very basic.

Homemade Crispy Seasoned French Fries

These came out really good, but I have one word of caution for those of you making this for the first time. Make sure the batter is very thick. I believe that having the consistency of the batter to be able to "drizzle" it like the recipe says is too thin. Mine was kind of like pancake batter, and that was still a little too thin because most of the batter dripped off the side of the fries while they were cooking. Next time, I'll make sure it's nice and thick so some of the batter will remain on the fries. Otherwise, very tasty!

Baked Beans, Texas Ranger

These beans are awesome! I cooked them in my smoker, and placed them under a brisket I was smoking, and let the juice from the brisket drip down into the beans. Also, I used chopped pieces of brisket in the beans in place of the sausage. Definitely a keeper!

Buttermilk Pancakes II

Excellent recipe! Followed recipe to the letter, and they were awesome! I fancy myself a pretty good cook, but I've always had problems with pancakes for some reason, until now. These were the bomb! Definitely a keeper!

Garlic Mashed Potatoes Secret Recipe

This was just ok for me. Somehow it seems like the raw garlic is just too potent for the potatoes. Maybe sauteeing them will make a difference. Might do that next time.

Chicken Fried Steak

Excellent Recipe. Meat came out crispy and tender. Gravy was creamy and flavorful. I followed the recipe exactly, except I used a bit more oil because my pan is exceptionally large. This one's a keeper!

Restaurant-Style Buffalo Chicken Wings

Very good recipe. I don't like wings, so I sliced up some boneless chicken breasts and they came out just fine. Also, I didn't pour the sauce over them, I put the sauce in a bowl and dipped the breast pieces in it. Much better and not as messy!

Ranch Burgers

Excellent recipe! However, I agree with many others in doubling the Ranch Dressing otherwise you won't taste it. Trust me, I've made it both ways, and doubling is the way to go. Also, cut down on the crackers (maybe 1/2 of what the recipe calls for) or you'll end up with texture like meatloaf. Use half the crackers and you will get a moist, juicy burger that doesn't taste "mushy".

Indonesian Satay

This was ok but I was expecting a little more based on prior reviews. The marinade was quite good, however the peanut butter sauce just didn't seem to go well with this chicken. Worth trying once, but probably won't make again.

Excellent dish. Better than most restaurants! I followed the recipe to the letter, and in my opinion, it doesn't need changing at all (except for doubling the sauce, as others have recommended). This one's definitely a keeper!

Andrea's Pasta Fagioli

Just ok but still missing something. I followed the recipe to the letter, but there doesn't really seem to be any bite to this dish. The next day, I added some torn strips of pepperoni to it which did add some zip, but overall, I was a little disappointed given all the rave reviews. I will probably make it again, and I'm certainly not a big fan of messing with recipes, but next time I will try to spice it up a bit. Just ok for me.

Smoked Sausage-Potato Hash

I'm trying to figure out what the big deal is here. Outside of throwing in an onion and bell pepper, you could serve the two main ingredients (sausage/potato) separately, and it would still taste the same. Doesn't seem like there's any mixing of spices or anything here. Just sausage thrown in with a potato and a little onion and bell pepper. Good ingredients, but not much of a mix to me. Actually, if you scramble in an egg or two, you'd have yourself a pretty decent omelette.

Excellent recipe! My grandmother used to make this when I was a kid, and I haven't had it since then. This is pretty close to hers. Also, someone else suggested putting the batter in a baggie and cutting off one of the corners to squeeze the batter out. I tried this and it works perfectly. Much better than messing with a sticky spoon.

What's the big deal here? This is just a standard Guacamole recipe. Down here in Texas, this is standard fare, so I'm not sure why all the hype. As a matter of fact, what other way would you make it? This is pretty basic folks.

Mom's Mozzarella Chicken for Drew

Very good recipe, however I agree with others here that it is critical that you use a decent sauce, otherwise it will taste bland. I used a homemade spaghetti sauce. I also used parmesan cheese over the top of the chicken before I put the mozzarella on. Came out very moist and tasty. Very good if you work it right.

Boilermaker Tailgate Chili

Very disappointed. I hope he didn't make this down here in El Paso last year when Purdue played in the sunbowl and try to pass it off as authentic. Most of the ingredients are from a can and taste like it. If you want it truly hot, better add more "hot sauce" as he puts it. Not trying to be critical, but this isn't authentic chile. Pass on this and try another chile recipe that has the word "Texas" in it.

Roasted Vidalia Onions

Very good flavor, but the onions were nowhere near ready in 15 minutes. I had to put them back in for another 15 minutes, so, for me, it was 30 minutes. Worth the effort though.
