Honey Chicken Stir-Fry

Easy weeknight meal. I like to use the frozen veggies that steam in the package. I double the sauce in this recipe and serve with brown rice.

My Crab Cakes

I halved the recipe and made 3 large crab cakes. I used a 6 oz can of lump crab, dijon mustard instead of dry, about 6 crushed saltines and fresh garlic instead of powder that I sauteed with the green onions. I kept the 1 egg. I made the mistake of adding the panko to the mixture instead of coating the outside, but they still turned out really good! I did not make the aioli as my preference is cocktail sauce.

Orzo with Parmesan and Basil

I liked this recipe but made some slight changes. First I used EVOO instead of butter to which I added fresh minced garlic. Only used about 1 T of parmesan and also added 1 diced plum tomato.

Cinnamon Cranraisin Bread

The only change I made was to omit the cranberries and add 1 Tblspn of ground cinnamon. I used this bread to make french toast the next day...next time I will select the light crust, instead of medium, on the bread machine as it made it a little too crusty. I'm sure it would be good with the cranberries but didn't want that for french toast. Will make again.

Bread Machine Pizza Dough

We thought this was great! I poured the beer into a measuring cup and kept on the counter for a couple hours to get flat. I also added about a teaspoon each of garlic powder, dried oregano and basil to dough ingredients. Once it was done in the bread machine, I pressed the dough onto a pizza crisper and let sit 15 mins. I baked approx 5 mins at 425 then pulled out, added toppings and baked approx 12 mins more.

Basil Vinaigrette Dressing

This was really good...fresh basil is a MUST for this vinaigrette. I only made 1/4 of the recipe for a salad of mixed greens, pine nuts, dried cranberries and gorgonzola. Will definitely make again!

Dill Dip III

Made this as an app for Easter and served w/ veggies. I cut the Lawry's salt in half and made the night before. Makes a ton, should have cut in half. Used dried chopped onion. Very good

Penne with Spicy Vodka Tomato Cream Sauce

Wow - this was REALLY good! I made a couple changes to try to lighten it up a bit. Instead of 1/2 c heavy whipping cream, I used 1/2 c half n half that was mixed with 1 teaspoon of cornstarch. Also, I added chicken sausage. Since there are just 2 of us, I didn't use the 1 pound of pasta the recipe calls for, but still used the same amount of everything else. Next time, I may stir in fresh basil instead of parsley. Oh and I definitely added more than 4 cloves of garlic - can't get enough garlic!

Italian Bread Using a Bread Machine

This is the BEST bread machine recipe! Once the dough is ready, I turned onto a floured surface, deflated the dough and formed into 2 loaves. I placed the loaves onto a baking sheet lined with parchment that I had sprinkled with cornmeal. I covered with damp towel and let rise 40 mins. Meanwhile I preheated the oven with a baking stone. Once the bread had risen, I slid the loaves (with parchment paper) onto the baking stone. While baking, I misted the loaves with water a couple times early on as this helps to make them crustier. I also added sesame seeds to 1 after I brushed with egg wash. Sounds like a lot of work, but really simple and it's definitely worth it!

Chicken Breasts with Herb Basting Sauce

We liked this - I had 2 large bone-in chicken breasts (only 2 of us) but actually doubled the herb mix. Marinated for about 2 hours in the herb mixture before baking. Ommited the hot sauce and basted every 15 mins. Will definitely make again.

Bread Machine Focaccia

Really good focaccia! I added 1 tspn garlic powder instead of fresh garlic, approx 3/4 tspn salt and added extra fresh rosemary that I chopped very fine. Once dough was ready from bread machine, I put on my baking stone (cold) and topped with mixture of EVOO, fresh rosemary, garlic powder, sea salt and fresh ground pepper. I put stone into cold oven while preheating - took about 20 mins from when I started oven to finish baking. Will definitely make again!

Jenn's Out Of This World Spaghetti and Meatballs

I only made the meatballs from this recipe since I used my own homemade sauce. ONly change was that I used dried oregano since I didn't have fresh. Very good - everyone really liked & so easy since you just drop them into the sauce to cook.

Bread Machine Rolls

These rolls were really good. Next time I would probably make more than 12 from the dough so that they are smaller. These were pretty big. My carb-aholic husband liked them. Since homemade bread doesn't keep that long, I froze the leftover 1's in a freezer bag.

Pizza Crust for the Bread Machine II

This was good but I expected more. I'll probably try other pizza crust recipes. The dough was easy to work with. I used kosher salt but probably should have used regular table salt as the crust tasted a little bland. I pre-baked for 5 mins on a baking stone, added toppings and baked only about 5 mins more - all at 425. Pizza was VERY crispy..not burnt, just cripsy.

Pork Chops for the Slow Cooker

I had 4 boneless pork chops and they were done after 4 1/2 hours in the slow cooker on Low. I followed the recipe as is, using low-sodium soy, and thought the flavor was good but the sauce turned out kinda runny. I was going to thicken w/ water/cornstarch mixture but we just ate as is. I would make this again...easy,no effort needed dinner for "the other white meat"!

Chicken Chili Soup

This was REALLY good! I had leftover roasted chicken to use up that I shredded , so I found this recipe and decided to give it a try. I did make some tweaks - 1 each red & green pepper, chicken broth instead of water, 1 can of cannelini beans (instead of kidney), about 3/4 c frozen corn and 1 teaspoon of chili powder (instead of 2). Fit nicely in 5 qt dutch oven. Let simmer for about 45 mins to thicken. Made a nice dinner w/ some Italian bread. Awesome!! Will definitely make this again.

Brown Sugar Meatloaf

I asked my husband what he wanted for dinner and he replied "meatloaf". I made this with a combination ground beef/pork/veal mixture instead of all beef. Probably only used between 1/4 - 1/2 cup of milk. Baked in larger pyrex dish instead of loaf pan. Let sit 20 mins to settle so that I wasn't slicing a loaf of mush. He liked it.

Roast Sticky Chicken-Rotisserie Style

This made such a moist chicken! Had 1 6lb. chicken, used same amount of spices (no white pepper) and stuffed with a quartered onion & fresh rosemary. This took 4 1/2 hours to slow roast at the 250 temp. Plenty leftover which I plan to use for soup.
