I added honey, cinnamon and raisins and divided the dough into 8 pieces. The dough doesn't really 'knead' per say, you are essentially incorporating a little more flour into it, which is fine. Baked on oiled cookie sheet in oven at 350 for 20 min. The first batch was crusty on the outside and I oiled the tops right away to soften. The second batch was much better because the dough was allowed to 'rest' for 20 min. and I brushed walnut oil on the tops prior to baking them. The result was they were fluffier and you couldn't taste the baking powder as much.

Downeast Maine Pumpkin Bread

OMG!! Best Pumpkin Bread Recipe Ever!! Baked exactly as written except I doubled it and used another reviewer's suggestion of poking holes in the crust and making a Boiled Cinnamon-Butter-Water Syrup to pour over the bread while still hot. Good thing I doubled it as it didn't last long!! Made some with nuts and without. Baked all 6 loaves at once, took 1 hour and 10 min. Yum! Thanks for a great recipe!

Maple Butter Frosting

YUM!!! Best ever maple butter frosting!!! I used 1 Tablespoon of maple extract and added 1/2 cup of chopped walnuts, and topped a chocolate fudge brownie recipe with it. Thanks for the great recipe!!

Nana Dot's Irish Soda Bread

I had given up on finding a great recipe for 'sodie' bread until now. THIS IS THE BEST recipe ever! I did use raw sugar instead of white, added 1/2 tsp vanilla and 1/4 tsp almond extract. Did not have currants and omitted the caraway seed. These round loaves turned out beautifully! ~A big hit! I will make it again for Easter, can't wait to share it! Thanks so much!!!
