Candied Yams

Drain the yam juice. Using the cinnamon, a pinch of nutmeg,a pinch of salt, the brown sugar, butter and a cup of orange juice, Bring to a boil then add the yams to this mixture and continue to cook just below a boil for just about 4 minutes to just thicken this a little and soften the yams. Then pour this all into a casserole and let cook for about 25 - 30 minutes, until bubbly. THEN put the mini marshmallows all over the top and put back into oven for a few minutes to soften the marshmallows. If you want to turn on the broiler to toast the tops of the marshmallows,BUT DO NOT WALK AWAY... just to put a slight toasty look to the marshmallows, which should still retain their shape. The orange gives an extra kick to the flavor.

My mama was a great cook and I grew up eating this very same recipe. Perfect Meatloaf. This is what a meatloaf should taste like..... Even better tomorrow .. If there's any left!

Sheryl's Baked Potatoes

I love this way of baking potatoes....I like to put chopsticks on either side of the long way of the potato and that stops the knife from slicing too far. I also find that first rinsing the sliced potato under cool water gets rid of the starches that make the slices stick together while cooking. I microwave about 4 minutes to soften the potato, then I follow the rest of the recipe. By microwaving, you actually cut down on the baking time in the oven.

Fudgy Chocolate Cream Pie

My late Mother-In-Law forgot to leave me this exact recipe for her lifelong famous chocolate pie. I have been trying to duplicate it for years and this is IT!!!! My husband thanks you from the bottom of his fully belly!!!!!!!!! I did add the extra milk and extra corn starch. I love a full pie and I put a meringue.

The World's Best Turkey

I have used this method for years -- juiciest turkey ANYONE has ever tasted. I put an orange, an apple and a short stalk of celery in the cavity. Also I use BROWN PAPER BAG to roast the turkey. I spray PAM on the inside and outside of the bag...If turkey is too big to fold bag closed, use another BAG to face into the first one. I also use a rack to keep the turkey from laying in the juices. When the bag is opened....the skin is the perfect color and exactly as the photo looks!!!
