Best Carrot Cake Ever

I made these as cupcakes for a bake sale and they came out so good. The recipe made about 35 medium sized cupcakes and I baked them at 350 for about 25 minutes. I made some modifications based on other reviews. I soaked the raisins in warm water for an hour. I used canned pineapple and drained the juices. I used my food processor to grate the carrots, it saved so much time. I drained the juice from the carrots and sugar after they were soaking for an hour. I added about 2 tablespoons of each, pineapple juice and carrot juice back into the batter. I added 1/2 tsp baking powder and 1 tsp nutmeg. I used a cream cheese icing which included melted marshmallows in the recipe that I have used before and liked.

Cinnasweet Pumpkin Seeds

I used 1 cup of seeds and cut the other ingredients by 1/2. I also reduced the cooking time and kept an eye of them while they were cooking. I made 3 different pumpkin seed recipes and this one was my favorite. They taste a little like carmel pop corn.

Easy Meatloaf

I make this all the time and everybody always enjoys it. I sometimes use 1/2 an onion and a green pepper.

It's Chili by George!!

I've tried several chili recipies, but this one has been the best. I added 1/2 a jalapeno pepper for an added kick. But it didn't need it. It was perfect and everybody loved it.

Brown Sugar Chops

This is definitely a keeper recipe. I didn't have soy sauce on hand. To improvise I used two bullion beef cubes dissolved in about 4 tablespoons of water and drizzled it on top not using it all. I used the boneless chops and since my friend was late wound up keeping them in the oven for 15 to 20 minutes longer. They still turned out so tender and juicy. I also served with mashed potatoes and used the extra “gravy” for the potatoes.
