I made these as cupcakes for a bake sale and they came out so good. The recipe made about 35 medium sized cupcakes and I baked them at 350 for about 25 minutes. I made some modifications based on other reviews. I soaked the raisins in warm water for an hour. I used canned pineapple and drained the juices. I used my food processor to grate the carrots, it saved so much time. I drained the juice from the carrots and sugar after they were soaking for an hour. I added about 2 tablespoons of each, pineapple juice and carrot juice back into the batter. I added 1/2 tsp baking powder and 1 tsp nutmeg. I used a cream cheese icing which included melted marshmallows in the recipe that I have used before and liked.
