Dill Gazpacho

Out of this World! A lot of chopping but so very worth it! I did add a bit of chopped fresh basil too, out of preference.

Eggplant Tomato Bake

I like this recipe as a base but I add a lot to it. I usually put a little salt and pepper over the eggplant, along with some mozzarella and even ricotta (sometimes). I put some of the cheese over the tomato too along with a dash of Italian seasoning. I serve it with sauce over top and a side of pasta. Yummy recipe!

Easy Mashed Potato and Roasted Vegetable Enchiladas

This is a great recipe that I make often. I add other vegetables that I have in the house, like peppers or cauliflower. I sprinkle the veggies with Goya Adobo too, for a little extra flavor.
