Michael's Foccacia Bread

Loved it, and got rave reviews from my family. That said, I did tweak a few ingredients. I used two cups whole wheat flour and a scant three cups of regular flour. I added a teaspoon of garlic to the dough, and probably a little more than 1/2 cup onion. Along with Parmesan cheese, I baked it with thin slices of green peppers. Once out of the oven, I added feta cheese, chicken (with some tomato herbs from Seasoned Home), tomato slices and mozzarella. Yum!!!

Honey Wheat Sandwich Rolls

I'd agree w/ everyone else - wonderful rolls! That said, I made some adjustments based on ingredients I had available. I had a scant 1/3 cup WW flour, so I used that, plus I ground up about 1/3 cup flax seeds, and 1 3/4 cup oats (ground) - to equal about 1 3/4 cup whole grain, and then I decreased the white flour to 2 cups. Or thereabouts. It worked, they're delicious! That's the fun thing about cooking - you can play with these recipes and take advantage of ingredients you have on hand!

Rustic Multi-Grain Bread

Wonderful recipe, although I confess I tinkered with it some, which is par for the course when I do any baking. I did not have rye flour on hand, so in its place I used fresh, ground flax for a nice and nutty flavor, plus I used more WW flour. So here are my changes: 2 cups WW flour, 3 cups all-purpose flour, 3/4 cup ground flax and about 1/4 cup wheat germ (I was getting rid of some left overs). In place of 2 T sugar, I used honey, and did not pack the 1/2 cup brown sugar. It turned out great, and like a few others have commented, it's wonderful with peanut butter and honey!!

Chocolate Chocolate Chip Cookies I

Fabulous cookies. My family loves them! I've made a few modifications - used Hershey special dark chocolate so they're to die for rich, plus I use at least 1 cup whole wheat flour (or whole wheat spelt) and sometimes 2 cups. The cookies are so rich, no one can really tell that they're wholewheat! I've also cut back to 1/2 cup butter along with 1/8th to 1/4 cup coconut oil. This really gives a rich flavor but you will taste coconut if you do this. Anyway, fabulous cookies, thanks for sharing!!
