Grilled Peaches

Good basic recipe with lots of options for creativity. The recipe had more balsamic vinegar than I actually wanted to expend or needed, so I reduced it the second time that I used this recipe and added some honey and cinnamon to the glaze. Next time I plan to use port as my husband and another reviewer suggested. We love blue cheese, but it was a little strong with peaches, so next time I will add cream cheese as another reviewer suggested; or I will change it into a dessert by topping with vanilla or peach ice cream.

Spinach and Strawberry Salad

Excellent as written. I just tossed in some feta cheese crumbles and glazed pecans attractively arranged on a serving plate along with the strawberries.

Broccoli with Garlic Butter and Cashews

Delicious even without the cashews. I went stronger on the fresh garlic simply because we love garlic. I'm thinking that I should have chopped some peanuts that I had in the pantry since I did not have cashews.

Garlic Teriyaki Edamame

I used Pinkypinky's suggestion and sauteed the garlic and edamame in a spray of olive oil. Next time I will use shelled edamame because the pods were too tough. The sauce was delicious served over jasmine rice.

Italian Breaded Pork Chops

After dredging in seasoned flour, seasoned egg wash and patting in seasoned panko crumbs, I spray with with a little oil and place on a rack in the oven so that all sides will crisp. I use the convection setting and bake at 375 (which is adjusted for convection) or 400F in the regular oven until done, depending on thickness. I do not find it necessary to brown in the skillet because I believe that I might lose some of the crumbs. In the past, I have added grated Parmesan cheese to the panko crumbs, but I believe this prevents crispiness.

Mushroom Pork Chops

This recipe will perk up with a couple of cloves of garlic sautéed with the onion, and a teaspoon of low sodium soy to individual taste.

Waldorf Salad II

Like many reviewers, I needed to reduce the amount of mayo, which brought this otherwise 5 star recipe down to 4 stars. I often add grapes for variety along with cran-raisins (instead of golden raisins, but it's all good). I no longer add walnuts because they are rather bitter for my taste; instead, being a Southerner, I use candied or regular roasted pecans. When I don't have celery, I just toss in crispy romaine lettuce before serving. This recipe lends itself to many additions such as adding blue cheese. Indeed, a good basic recipe.
