Key Lime Pie VIII

This was quite good and easy to make; however, I couldn't give it more stars since it had the underlying artificial taste of Cool Whip. If I made this again, I'd whip my own from whipping cream.

Herbed Pork Roast

This is the only pork loin recipe I use since my husband and kids absolutely love it (and the leftovers!). Marinating it overnight gives it the most flavor, and the sage is key so don't skimp on it. We like our served with a sauce I make of horseradish, mayo, s & p.

Magical Egg Salad

This was way better than the mayo-relish-s&p egg salad I usually make. The dijon mustard and splash of steak sauce give it a little tang and a lot of taste (I omitted cayenne for my toddler, so no comment on that). The only thing I might add next time is a bit of diced onion. Thanks Emily!

Strawberry Summer Salad

My dressing didn't "drizzle" so I added several tablespoons of coconut milk. Not only did it help with the consistency of the dressing, I preferred the hint of flavor it added. You may also want to reduce the sugar in the dressing.

Moist Banana Muffins

I make this recipe in my stand mixer, blending the mayo & bananas first, then adding in the flour mixture. It can't get easier than this, and the results are fantastic. Every time I make these, my family and friends rave about them. Mayo in cake recipes is the best!

Grison Beef Stew

One of my favorite recipes on this site... I don't know why this isn't more popular. The wine and bacon flavors blend to make the meat and cabbage melt-in-your-mouth amazing.

Double Chocolate Chunk Cookies

These are the best cookies I've ever made. My mom was just over and blew her low-carb diet with them! Sorry ma. The recipe is perfect and needs no changes, however, it made 70+ cookies when the batter was "tablespoon sized". I'd probably make bigger ones next time to save some time in the kitchen. 8 minutes for super soft gooey cookies and 10 for sturdy ones.

Spinach Chicken Enchiladas

Nothing frustrates me more than when I read reviews and change a recipe, then wish I hadn't messed with it. Reducing the nutmeg (sorry not a fan) and possibly adding the pepper jack cheese are good suggestions, adding extra spices is not. After reading reviews, I was afraid this would be bland so I added extra garlic, a bit of cumin and ground pepper. It was too strong and ended up overpowering the wonderful creaminess of the recipe. Not all recipes need a "kick." I plan on making this again as written minus the nutmeg.

Chicken Salad

So good and so easy. I microwaved my bacon between paper towels for 5 mins while prepping the rest of the ingredients. Crispy, fresh grapes (I used red and green) are a must for texture and flavor. Wonderful!

Peppy's Pita Bread

I love making bread, but won't be making pitas again. Even using my bread machine, it was too much of a hassle for a marginal product. My dough was quite sticky, so adding flour and trying to stretch the bread was time consuming. Then they stuck to the countertop. When I'd finally gotten them in the oven, parts of the pita didn't bubble up while others did. After the hours of prep, I was left with half-puffed, semi-hard pieces of bread. I think I'll spend the $1.99 at the store next time.

Cheesecake Topped Brownies

These were just ok for me. I thought they were too sweet and the cheesecake filling did not taste like cheesecake at all. However, the layers were pretty and made a nice presentation at a family gathering.

Stuffed Pattypan Squash

I was looking for a recipe with sausage in it, so I replaced the bacon with 1lb Italian sausage. I also did not add the scooped squash back in because it wasn't going to fit - instead I added water for the bread crumbs. It was just what I wanted and everyone loved it. My picky 3 year old even ate it.

Savory Pork Roast

This tasty and tender loin roast received rave reviews from my family when I made it last month. I was in a rush this week, so I just threw another pork loin in the slow cooker with the same seasonings and a few veggies - big mistake! It was dry and barely edible. Even the veggies I added weren't nearly as good as the ones I roasted in the oven last time. Don't cut corners... use the oven and a meat thermometer for a perfectly cooked roast.

Bubba's Jambalaya

Unlike many of the reviews I read, I cooked the rice in the pot as directed and it turned out great. The medium grain rice I used didn't stick to the bottom (I stirred it every few minutes) and cooked up nice and plump in about 20 minutes. How are people cooking it separately and still getting the jambalaya thick enough since the rice absorbs most of the liquid? The only change I made was that I subbed 1 tsp celery seed for the celery since I didn't have it on hand. Follow the directions and you'll end up with a great supper.

Balsamic Pea Salad

The balsamic vinegar gives this pea salad a great twist of flavor. I reserved some of the toasted almonds and sprinkled them on top for a fancier presentation. I'll keep this recipe handy - it's an easy and impressive side dish.

Green Velvet Soup

The flavor of this soup is excellent! Even my toddler who hates veggies seemed to enjoy this. Although I love garlic, I'm glad I didn't add it in - it would have altered the flavor too much. Changes: I used homemade chicken broth and added a dollop of sour cream to each bowl.

Cranberry Flax Muffins

I added 2 large shredded carrots as another poster suggested and they turned out great. I didn't need additional flour to offset the carrots. I also subbed applesauce for the honey and added dried cherries and chopped walnuts in addition to the cranberries. This will be my go-to muffin recipe.

Christmas Cornflake Wreath Cookies

I made 2 batches: the first in a saucepan and the second in the microwave. Surprisingly, the microwave batch was faster and made less of a mess. The marshmallows didn't melt uniformly in the saucepan whereas they puffed up and blended beautifully in the micowave. I doubled the vanilla extract and food coloring, and omitted the almond extract.

Hearty Split Pea Soup

As someone who puts fresh garlic in just about everything, I have a hard time believing this, but I didn't like the garlic in this recipe at all. My husband agreed - the flavor of this soup isn't as good as a comparable recipe without the garlic. For me, it overpowered the earthy flavor that I love with split pea soup.
