Chicken Noodle Casserole I

My mom made a version of this 25+ years ago when I was growing up. 1 bag no yolk egg noodles, cooked chicken cut up I use 3 large breasts and shred/chunk it (u decide how much, some people like more chicken than others). 2 cans whole mushrooms or saute some fresh ones, 4 cans cream of chicken soup and 2 cans milk. After you boil and drain the noodles return them to the pot. In separate bowl mix the soup and milk well. Add the soup mixture, mushrooms and chicken to the noodles. Pour into roaster or large 9x13. Cover and bake at 350 for 1 hour then uncovered for 15 min. Take out add shredded cheddar cheese and crushed potato chips to the top for and bake for 15 minutes. My friends always begged for more. My mom even created a vegetarian version for my best friend!

Charred Corn on the Cob

I must admit this recipe made my corn tastier than usual (usual meaning I don't marinate it) but there was no sweet coconut milk flavor to it so I was a bit disappointed with that. To the person that said the corn was hard I think it was the corn or maybe you didn't cook long enough. We cook it longer than 15 min.

Twice Baked Sweet Potatoes

These were good however next time I will use 4 oz cream cheese instead of 8. Way too much in my opinion. I also did no oil no foil. I was cooking a ham at the same time so I did the potatoes on the oven rack at 275 for 2 hrs with the ham and then at 400 for 30 min to crisp up the skins.

Mini Pineapple Upside-Down Cakes

DELICIOUS! I used the large muffin stoneware pan from pampered chef. Brushed the pan with vegetable oil. I put the butter brown sugar mixture in the bottom of each cup followed by pineapple rings and a cherry. I cut the pinapple rings in 1/4 and used two 1/4 slices in the bottom or each one. I then Duncan Hines Pineapple cake mix and used the directions on the box. Baked according to this recipe 350 for 20 minutes. I allowed them to cool for 5 minutes then inverted onto a wax paper lined cooling rack.

Smashed Cauliflower

Kids were clueless this was cauliflower and ask for it often. I use 2 heads of cauliflower and 4 cups broth. It is important to let it simmer until the liquid has reduced to half. Instead of using the vermont white cheddar I thicken it with Idahoan White cheese instant potatoes. It solves the runny problem and the fact I can't find that cheese any where.
