Easy and Delicious Crusty Popovers

Not sure how my result is so radically different than the other 6 reviewers, but boy was it! Dense, didn't rise so much as a centimeter, and were VERY eggy- like spoon bread! :( I am a very careful measurer, and am very attentive to temperature and all baking aspects. Maybe I literally "babied" these to much... I will give these another try, and maybe not be so "A.R." about every part of the process. If anyone sees what I did wrong- PLEASE let me know!! I'd love to have your experience as my own!

Creamy Rice Pudding

My husband's grandmother used to make him rice pudding. Since she passed, he's only had my two or three prior attempts. While good, they were not "it". Well, this IS IT!! He was so pleased- transported back to when he was a child! Follow the directions! It always frustrates me to see poor reviews, then you read them, and the reviewer has changed EVERYTHING! GRRR! My only suggestions are: add some cinnamon- YUMM! DO NOT rehydrate your raisins (I know, it doesn't call for that, but if you do, this will be a lovely soup- not a pudding!) Finally, when adding the second part of the milk, mix your egg into the milk, then add enough of the hot mixture to bring the milk/egg to just over body temp- you eggs won't "scramble"! This grateful wife says a BIG THANK YOU to Erica for posting this recipe!

Chicken Pot Pie VIII

My review is only for the filling- I lack the "knack" for a decent home made crust, so I use the roll out premade kind! This is the BEST filling I've found! Like others have said, precook your potatoes! I made this again tonight, but didn't have celery or carrots. 6 oz frozen mixed veggies worked GREAT! Love this! Thank you for posting!

Champagne Lobster

This is an AWESOME recipe!! BUT! I read the other reviews, and I just want to say- THIS IS NOT A SAUCE!! It's an aromatic steam that gently flavors the lobster meat! If you want a sauce to go with this recipe, try this; saute 1/2 thinly sliced shallot, 1/2 tsp lemon or orange zest in 4 tbsp butter until shallots are crisp tender. Add 2 cups champagne, simmer until reduced by half. Strain the sauce through cheesecloth, return liquid to the still hot pan. (Keep the skillet on the hot burner, but do not turn the burner back on!) Wisk in 3 tbsp cold butter, cut into small pieces, adding more butter only after the last is fully incorporated. Drizzle evenly over cooked tails, serve immediately.

Kolaches From the Bread Machine

I made these this morning and my husband was CRAZY about them! The dough is sticky, but keep a bowl of flour handy for dusting your hands and it's a breeze to work with!! Having no canned filling, I made 3 "sweet" versions: lemon curd, homemade blackberry jam, and strawberry preserves. I sprinkled a little Sugar In The Raw on before baking. I also made some with sausage and cheese as suggested by another reviewer. We loved them all! This recipe makes a LOT of dough, so I also made some dinner rolls (again, as suggested by another reviewer). These will now be taking the place of my homemade yeast rolls that I serve on holidays! Warm with a little honey butter- YUMMY! I will definitely make these again, but will try halving the recipe- hubby says he'll double in weight if I make many more full-sized batches!! :-) OH! 7/8 of a cup is 1 cup MINUS 2 tablespoons!! Took forever to find a reliable conversion chart!

Cream-Filled Cupcakes

I made this exactly as instructed and it is WONDERFUL! Although, I'd say if you are in a hurry or just don't wanna buy the separate ingerdients, a good chocolate cake mix would suffice nicely. I did NOT do the whole cut out thing, tho. I used a Wilton bag and the Bismark Tip (#230). Stuck it in the top and squeezed a bit of the filling in. Worked like a charm. The cupcakes come out light and airy enough that you really do not need to cut the peice out! I also didn't make my frosting. I had a can of Duncan Heinz Dark Chocolate that I nuked for about a minute. Stirred it up and drizzled the cupcakes. It actually got a little hard upon cooling. Made my cupcakes a LOT like the Little Debby kind!

Manicotti Alla Romana

I make this about 2x monthly- a real house fav! To make stuffing the shells easier, I use my longest, fattest cake deco tip and the bag. Fill with the cheese and stuff shells that way- less tearing of the shells!

White Bread For The Bread Machine

This is really good! Using bread flour has a small impact on texture, but all-purpose works very well! I added: 1/2 cup chopped sun dried tomatoes. If you use the jar, drain well, if reconstituting, be sure tomatoe is full wet! 1 teaspoon dried rosemary Make small wells in the flour at corners, place equal parts tomatoes in each. After you have made the well in the center for your yeast, first add the rosemary. No additional cooking time is needed.
