Shrimp Fettuccine Alfredo

Quick, easy, and delicious! Didn't have half and half but had evaporated milk and that worked nicely. I put uncooked shrimp in a bowl and seasoned with salt and fresh garlic. I threw them in, juice and all at the end. It only takes a couple of minutes for the shrimp to cook and the juice from the seasoned shrimp gave the sauce nice dimension. We have this once or twice a month now with different pastas and veggies thrown in.

Blackened Chicken

Great everyday recipe especially when you want to get dinner on the table fast and you have not marinated anything overnight. I doubled the seasoning and butterflied the chicken breast. I cooked each side for 4 minutes and skipped the oven. I added a pat of butter to the pan for some moisture towards the end of cooking. Seasoning penetrated well and was balanced. I served with red beans and rice from a box and canned corn. I will make this again.

Creamy Italian Dressing I

Good basic recipe. I don't like my dressing so tangy so next time I will reduce the red wine vinegar to less than half. Usw whatever combiation of herbs you have on hand if you don't have italian seasoning. I used parsley, thyme, rosemary, and oregano. Add the sugar gradually to your liking.

Thai Fish Cakes

These were ok, nice and quick as an appetizer for a party. I would put more fish or not pulverize the fish so much in the processor so you feel like you are eating and tasting fish.

Coconut Pecan Frosting II

DELICIOUS! I followed the instructions given by reviewer MSBETTYE. It turned out perfectly. If you choose to toast the coconut and pecans watch them carefully! I had to redo my coconut because I let it scorch a bit.I put this on top of a boxed chocolate cake mix but beacause of this frorsting it tasted home made.

Chantal's New York Cheesecake

I made this cake the night before my bday dinner party. Considering this was the first time I ever made a cheesecake it tunred out excellent. I followed the directions exactly only I also put it in a water bath in the oven for an hour then turned the oven off and left it overnight in there (I went to bed at midnight. It was perfectly baked and had a nice consitency. The top was not nicley browned however, which was ok since I spead Strawberry preserves on top. My guests loved it and so did I. This is a keeper. One tip is to really have all your ingredients at room temperature. Especially the cream cheese. I had small bits of cream cheese that did not mix well because it was too cold.

Cantonese Barbecued Pork

Oh this so GOOD! It does taste like bbq pork you get from the Chinese store. I didn't have any Hoisin sauce, so I processed orange marmalade, fresh garlic cloves, sherry, a touch of soy sauce, as a substitute. I cooked it on the grill since it was already fired up. I would make this again and again.

Oven-Roasted Vegetables

DELICIOUS, who knew? if you cut your veggies small reduce the time they cook or they will get mushy. this is a keeper and I will make it at least once a week using differnet veggies.

Chicken Satay

not bad after you do some tweaking. i added more water to get a consistency I liked. i also added soy sauce, fish sauce, onion powder, more garlic, and a little more lemon. i tossed the chicken in fish sauce and soy sauce before i placed it under the broiler.

not good at all. instead try it with lemon or almond extract with some splenda. for those of you who can eat cream cheese, save the cocoa powder for that instead.
