J.P.'s Big Daddy Biscuits

Reviewed: Sep. 17, 2011
I have used this recipe so many times that I no longer need to look at it while I am making them. I too use butter instead of shortening, and they turn out fantastic every time. They are great for a breakfast sandwich. I serve them with extra old cheddar cheese, a fried egg, and bacon on the biscuit. Yummmmmmmmmm JP, you rock! Thanks for the recipe, and for years of fabulous biscuits. By the way, if you want, you can add different herbs to the dough, or some grated cheese, green onion, or what ever you decide that you like. If I could have rated these a 10 I would have done so without hesitation. Thanks again.

Burgundy Pork Tenderloin

Reviewed: Sep. 28, 2009
The only reason I gave this 2 stars was because of the ease of preparation. The recipe calls for 45 minutes of cooking time. This I found was way off of the mark. We like our pork on the pink side, but at 45 minutes, the pork was still raw. Before I think to try this again, (and I would only do so because of the ease of it), I will have to go over it again, and figure out what changes I will make. Instead of a burgundy, I might go with a Shiraz or a Pinot Noir. We found the Burgundy to be on the strong side, and the flavour over powered the pork way too much.

Aunt Johnnie's Pound Cake

Reviewed: Mar. 20, 2005
When I made this cake, I made a lemon glaze to go with it. My husband who is not a person to eat sweets, actually ate a whole slice himself. Usually when I bake cakes etc, he takes them into work with him to share with his fellow co-workers. This time I was told to make sure that I left enough for him to have a slice or two for later. Believe me, that is the highest compliment that anyone has ever gotten regarding baked goods of any kind. I really do appreciate you sharing this recipe with us. I will be baking it more often. The lemon glaze is as follows: The juice of 2 lemons. The zest of 1 lemon finely grated. 1 1/2 cups icing sugar. Combine all of the ingredients together and incorporate well. When the cake comes out of the oven, poke holes in the cake and with a pastry brush, brush a layer of the glaze over the cake. After 5 minutes brush another layer of the glaze over the cake. Let stand for about 15 minutes. Invert cake onto a serving platter or cake plate. Again, poke holes into the cake and spoon the glaze over the cake. Do this until all of the glaze is used up. Let the cake cool completely. Slice and serve. You won't be disappointed.

Tantalizingly Tangy Meatloaf

Reviewed: Aug. 21, 2003
My husband and I loved this meatloaf recipe. He says that one of the things that he likes about meatloaf the best is that it never comes out the same way twice. This is true even with this recipe. It is definitely a keeper. Thanks for sharing it with us Stacy.

Chocolate Mint Mayonnaise Cake

Reviewed: Mar. 14, 2003
WOW!!! I have baked this cake twice now and both times it was a hit at my husband's office. He has brought it in around 7:00am and the cake has been gone by 9:00am. I decided to bake it in a bundt pan and just drizzled the "frosting" over it. I have been asked for the recipe by several people and I have gladly shared it with them. Thank you for sharing it with us Cris!! HAPPY BAKING!!! I have been asked for the recipe from several people and I have gladly shared it with them.

Easy Turkey Curry

Reviewed: Dec. 31, 2002
We loved this dish!!! It was simple to make and very flavorful. I must admit that I added more curry powder than what the recipe called for (I used 3/4 teaspoon), and it tasted even better the next night. You can also serve this over toast, buttered and cubed. I also had it over some mashed potatoes and found it to be quite flavourful as well. Thank you so much for sharing this recipe with everyone.

Easy Oven Beef Stew

Reviewed: Dec. 24, 2002
My husband and I couldn't believe how this recipe turned out!! I would never have thought to use gingerale in a recipe other than a punch. We enjoyed it so much. Definately a keeper!!! I added sweet baby carrots and some potatoes as well as some garlic, bayleaves oregano and basil just to make it a complete meal and to spice it up a little. Thanks so much for submitting this recipe for everyone to try.

Butter Cookies I

Reviewed: Dec. 24, 2002
Although the recipe was easy to make, my cookies turned out hard. We like our cookies soft. Any suggestions on how to do this? I/we really like the flavour of this recipe and I would like to use it again. Thanks for submitting it.

Chocolate Pound Cake I

Reviewed: Dec. 16, 2002
This is the 2nd best chocolate cake that I have ever made. I will admit that it came out with more of a brownie consistancy, but that is probably my fault. I should have let it bake a little longer. I will make this again. Thanks for sharing.

I think that you might have been using a convection oven because I had to bake this cake for at least 1 hour. I added a little more lemon than the recipe calls for and it turned out fantastic!! Thanks Kimberly.
