Roasted Butternut Squash and Garlic Lasagna

I roasted both the garlic and butternut squash and together in the cream sauce they create an incredible flavor. It's luscious! While the squash was roasting in the oven, I put dry noodles in a 9 x 13 pan on the stove and poured HOT water over them. They were soft by the time the squash came out of the oven! I made the white sauce with nonfat milk and used fat free half and half on top. I also chopped fresh spinach and put it in each layer. This dish is perfect for a casual family dinner or as a side dish for a more sophisticated dinner party. I give it 10 stars!

Turkey Veggie Meatloaf Cups

Very good recipe and I loved putting them in muffin pans. Easy, cooks quicker and easy to reheat. Little muffin tins would make super easy meatballs.

Sweet and Savory Slow Cooker Pulled Pork

Follow the recipe exactly and it is superb! You can taste the root beer flavor until you put the BBQ sauce in them at the very end.

Pat's Baked Beans

These were very tart and too over-powering. They needed more liquid (I drained the beans). Their basic flavor was good and I will make again - tweaking the recipe. I used turkey bacon and that was a success. The red kidney beans remained too firm, so I think I will use another can of pintos instead.

Crunchy Peanut Coleslaw

I served this with Pulled Pork and cornbread. Everyone dished it up on their plates, but no one ate much of it. I was asked if it was made with peanut butter. I thought the dressing was very yummy but when I saw their reaction to the finished dish, I wished I would have left off the peanuts. I'm sorry b/c I thought it was an interesting idea.

Cheesy Ham and Hash Brown Casserole

I made this while camping, so used dried hashbrowns in a box and just added hot water to reconstitute them. Forgot the parmesan, but had all other ingredients. Made in a cast iron dutch oven over really low heat. Stirred often. It turned out super terrific!!!! Everyone raved and there were no leftovers.

Mediterranean Quinoa Salad

I made this (without the chicken) for a wedding reception and it was absolutely fantastic. It is really high in sodium, so those with high blood pressure or heart problems should avoid it - sorry! It IS even better the next day, if there's any left.
