My Best Clam Chowder
Minor adjustments and this is AMAZING: I use 5 cans of chopped clams instead of 3 (can you ever have too many?), 1.5 cups chopped onion, 1.5 cups sliced celery, 1.5 cups sliced carrots, and I skip the potatoes. I also replace the quart of half-and-half with 1 pint half-and-half and 1 pint skim milk. Made it for Thanksgiving dinner this year, and the entire (HUGE) pot disappeared! Also perfect for cold days when you need to heat things up a bit, and lasts for a good few meals if you just pair it with some sourdough or french bread.

Maryland Crab Soup
My husband prefers this with a bit more liquid in it, so instead of 3 cups of water, we toss in the full gallon of water. Sub in peas for lima beans and use 1.5 to 2 cups of each vegetable to bulk things up a little. Other ingredients are multiplied by roughly a factor of 2, and we use the cheapest crab we can find (honestly, it doesn't make much difference in the soup, so why not go cheap?). Wonderful soup, and easy enough that my husband can make it all by himself!

I've made this for multiple gatherings and it's ALWAYS a huge hit. Even people who don't usually like guacamole love this stuff! Requested again and again, and good even several days later.
