Justin's Hoosier Daddy Chili

I came upon this recipe while doing an ingredient search. I had 5 cans of tomato soup and 5 cans of pinto beans in my cupboard and I was desperate to make some room in there!! So I made this chili yesterday....What great color!! When the recipe called for 5 tablespoons of chili powder, I thought it MUST be a mistake.. But no.. This just may be the best chili I have ever made, and I have tried many...

Tangy Mango Slaw

This is going to go PERFECTLY with my barbecued short ribs that I am fixing today. I picked it because it calls for ZERO oil or mayo. If you like a tangy cole slaw, you will love this. I heeded what others said and used the same amount of dressing in twice the amount of cabbage.

Peanut Butter and Banana Dog Biscuits

I've made this several times now, with a few variations: Because of the different types of peanut butter I've used, I have had to adjust the flour. Just keep adding until you get to the rolling consistancy that you need. I substituted canned pumpkin for the banana because I've heard it is excellent for dogs. I didn't use the entire can, obviously, so I put the rest in baggies and froze for later recipes. I've put in leftover rice and quinoa, I've used a dab of oatmeal, I've grated up carrots.. As you can tell, I've monkeyed around with it quite a bit and my dogs still love me anyway.

Sweet Dinner Rolls

Five Stars because it's exactly what I was looking for!!...My dinner guests raved about it, and one little guy had FIVE ROLLS!!! Kids love it. Next time I'll try using whole wheat and a little less sugar.

Mediterranean Medley Salad

FANTASTIC!!! I used red bell pepper, broccoli, cauliflour, carrots, cucumber, tomatoes, and basil. I'll be replacing green salad for this on many dinners. I'm sure I will be making this over and over again!!!

Greek Veggie Salad

I made this salad today to take to a barbeque and I can't wait to see what people say!!! Unlike some, I did NOT cook the cauliflour and broccoli but chopped them fairly fine. I also added a can of artichoke hearts, although next time I will add the more flavorful jarred artichokes. I added one bunch of green onions to the recipe, You could use oil and balsamic vinegar dressing to this instead of the Italian dressing, which is what I did. Cucumbers would be delicious, although I didn't have any. Make sure you cut the seeds out first so that they aren't too mushy. Finally, Kalamata olives are a MUST!!! I LOVED THIS!!! Let's hope the dinner guests do too!!

No Bake Cookies I

These are awsome!!! The nice thing is that I had everything for them already in my kitchen!! I made these EXACTLY by the recipe and they turned out perfectly. Just a hint: once you drop them onto the wax paper, go back and "push" each one together so that you end up with less little crumblies.

Mexican Chicken Soup

This was a perfect chicken soup for my husband and I because we BOTH have a bad cold and we could actually TASTE it!!! A couple of changes I made: I added one can of drained corn and I sliced up 1/2 of a jalapeno. I also used twice as much cilantro. I added all of these with the chicken and other ingredients during the last 5 minutes, which made the jalapeno fresh tasting instead of being overcooked. Don't worry, it really wasn't that spicy. Try it, you'll like it!!!!!

Chocolate Cheese Frosting

Great chocolate frosting recipe. I wasn't sure about adding cinnamon, so I just added a sprinkle. That seemed to be enough cinnamon flavor...it seems to compliment the chocolate, without being too cinnanmon-y. I liked the consistancy of this frosting, and everyone seemed to love it.

Chicken Enchiladas II

Ok, Ok, I made some changes.. I doubled the sauce recipe so that I could spread more on the top and also put some in the bottom of the baking dish before the enchildas. I used cream of CHICKEN soup instead, I used way more cheese, I added one can of black olives and sliced them, 2 tblsp of chopped jalapenos, NO garlic powder, and NO milk and NO butter. I didn't saute the onions, just put them right into the mixture. I LOVE this recipe!!. My company raved! I served with a green salad and refried beans, covered with cheese. And wine. Don't forget the wine.

Chocolate Banana Bread

I always have over-ripe bananas on hand because I just pop them in the freezer when I have one or two laying around. When I get enough I make banana bread. We thought the banana flavor came through very nicely, even though it is a chocolate banana bread. I added walnuts and a teaspoon of salt (I was suprised it didn't call for salt.) By far one of the best quickbreads I've made. December 2011...Made this again and added one cup of coconut... WOW!!!

Perfumed Coconut Cake

WOW. I think I died and went to heaven. After a dry run last week, I made this cake again with a couple of small changes, which I think improved it, even though it is an AWESOME cake just as it is. First, I added 1/2 cup of shredded coconut to the batter, and the biggest and the best change was that I made a cream cheese frosting, adding the coconut extract. I always slightly underbake my cakes and I suggest you do the same...

I make a version of this a lot..I've not tried the bottle of beer ingredient, but I would imagine that it only enhances this easy, popular, and REALLY REALLY good dish!!

Baked Ziti I

Great recipe!! Some changes I made were: I substituted a half pound of Jimmy Dean's hot sausage for half the hamburger. I used a pre-grated mix of mozzarella and provolone cheeses and I added about 3 cloves of garlic to the onion-meat mixture as I was browning it. Be sure to cover the dish in foil or it dries out. It makes a lot, but I was able to fit it all into a rectangle cake pan. With bread and a salad, this would feed 8-10 people. I will definitly make this again and again.

Pumpkin Bread IV

Yup, this is the one to die for. I liked this recipe a lot because you can use the large can of pumpkin puree, unlike most pumpkin bread recipes. The other plus is that this calls for half baking powder and half baking soda. Don't fall for those recipes that call for all baking soda because you can really taste it in the bread. The only change I made to this was to cut the oil down to one cup. This recipe really is "the best".
