Justin's Hoosier Daddy Chili

I came upon this recipe while doing an ingredient search. I had 5 cans of tomato soup and 5 cans of pinto beans in my cupboard and I was desperate to make some room in there!! So I made this chili yesterday....What great color!! When the recipe called for 5 tablespoons of chili powder, I thought it MUST be a mistake.. But no.. This just may be the best chili I have ever made, and I have tried many...

Ziti Chicken and Broccoli

I liked the flavor of the sauce a lot..A bit salty, so be careful of adding more salt. Also, the recipe calls for corn starch to be added, but does not say how. DON'T just dump the cornstarch in or you will have lumps to deal with. Some changes for next time: Half & half instead of heavy cream (it doesn't need it!)More artichokes, less pasta, and less chicken. I think I would have liked it better as a saucier dish.

Banana Loaf Cake II

Using a cake mix and pudding mix makes this recipe WAY too sweet for me, although I really did like the flavor..Very banana-y!! If you are looking for something like banana bread, though, this may not be the one for you. If you are looking for a sweet, sweet cake, you will probably love it.

Baked Ziti I

Great recipe!! Some changes I made were: I substituted a half pound of Jimmy Dean's hot sausage for half the hamburger. I used a pre-grated mix of mozzarella and provolone cheeses and I added about 3 cloves of garlic to the onion-meat mixture as I was browning it. Be sure to cover the dish in foil or it dries out. It makes a lot, but I was able to fit it all into a rectangle cake pan. With bread and a salad, this would feed 8-10 people. I will definitly make this again and again.

Cinnamon Coffee Cake II

I will NOT make this again. With 2 boxes of pudding mix, plus the brown sugar-nut mixture it was WAY too sweet. This was a very dense, heavy cake that didn't get very "cake-y".

Mexican Rice III

Here's a suggestion: Make sure you bring all your ingredients together before you start cooking the rice...Have everything cut up and ready to go so that you aren't opening the rice constantly...That makes it sticky and clumped together. Otherwise, great taste and I will definitely make this again....

Chicken Enchiladas II

Ok, Ok, I made some changes.. I doubled the sauce recipe so that I could spread more on the top and also put some in the bottom of the baking dish before the enchildas. I used cream of CHICKEN soup instead, I used way more cheese, I added one can of black olives and sliced them, 2 tblsp of chopped jalapenos, NO garlic powder, and NO milk and NO butter. I didn't saute the onions, just put them right into the mixture. I LOVE this recipe!!. My company raved! I served with a green salad and refried beans, covered with cheese. And wine. Don't forget the wine.

Absolutely Ultimate Potato Soup

OK, am I the only one that felt like I was eating a bowl of gravy? WAY TOO GLUTENOUS for us. Although it was tasty, it was too thick, even though I "watered" it down with twice the amount of half and half (recipe calls for heavy cream, though) I used only five pieces of bacon and that was plenty. I gave it three stars because I would probably make this again, but with a revision. Leave out or reduce the flour, so it does not have such a pasty consistancy. The recipe says to puree half of the soup, next time I wouldn't take as much out...we like it a little more chunky. Good luck on this one...Hope you're not on a diet.

Chocolate Cheese Frosting

Great chocolate frosting recipe. I wasn't sure about adding cinnamon, so I just added a sprinkle. That seemed to be enough cinnamon flavor...it seems to compliment the chocolate, without being too cinnanmon-y. I liked the consistancy of this frosting, and everyone seemed to love it.

Mexican Chicken Soup

This was a perfect chicken soup for my husband and I because we BOTH have a bad cold and we could actually TASTE it!!! A couple of changes I made: I added one can of drained corn and I sliced up 1/2 of a jalapeno. I also used twice as much cilantro. I added all of these with the chicken and other ingredients during the last 5 minutes, which made the jalapeno fresh tasting instead of being overcooked. Don't worry, it really wasn't that spicy. Try it, you'll like it!!!!!

Raspberry Jalapeno Jelly

This did not gel very well at all, even though I tried to tweak the pectin. As for the sprig of mint, Like others, also didn't know what to do with it, as the recipe never mentions it later.

Greek Veggie Salad

I made this salad today to take to a barbeque and I can't wait to see what people say!!! Unlike some, I did NOT cook the cauliflour and broccoli but chopped them fairly fine. I also added a can of artichoke hearts, although next time I will add the more flavorful jarred artichokes. I added one bunch of green onions to the recipe, You could use oil and balsamic vinegar dressing to this instead of the Italian dressing, which is what I did. Cucumbers would be delicious, although I didn't have any. Make sure you cut the seeds out first so that they aren't too mushy. Finally, Kalamata olives are a MUST!!! I LOVED THIS!!! Let's hope the dinner guests do too!!

No Bake Cookies I

These are awsome!!! The nice thing is that I had everything for them already in my kitchen!! I made these EXACTLY by the recipe and they turned out perfectly. Just a hint: once you drop them onto the wax paper, go back and "push" each one together so that you end up with less little crumblies.

Beef Pot Roast

This was better than other roasts I have made in the past. I think the pan searing ahead of time really makes a difference, locking some of the moisture in the meat. I poked garlic cloves into the roast and added a whole garlic under it with the onions, which made my house smell divine!! I also added 2 cups of au jus to the pan and threw in some potatoes and carrots, roasting with the lid ajar. I rate this 4 stars,not five because it was still a little dry.

Pecan Pie Bars II

I made these ahead for Thanksgiving this week, thinking they would be a good substitution for Pecan Pie. I thought they were, but my husband says no. What does he know anyway???!! That's why the four stars, since the name is Pecan PIE Bars. Try using more pecans and topping with whipped cream. YUMMY!!!

Most Excellent Breakfast Casserole

Out of five people at breakfast this Christmas morning, two really liked it, one didn't like the texture of the bread on the bottom, (me) two people didn't say, although they left it on their plate and didn't eat it. I think they were being polite. I thought this was lacking something. And buttering the bread????...I didn't see the point in that, since this is VERY fattening already. I'd rate it one star, myself, but others thought it was good.

Sweet Dinner Rolls

Five Stars because it's exactly what I was looking for!!...My dinner guests raved about it, and one little guy had FIVE ROLLS!!! Kids love it. Next time I'll try using whole wheat and a little less sugar.

Slow-Cooker Chicken Tortilla Soup

If you're looking for an easy dinner, just try this one!! I loved this recipe for the ease of cooking!! As per other raters, just put the frozen, raw chicken in and when you see it is done, take it out and shred it. I normally don't like my chicken "boiled" but this was just fine. The only reason this got four stars is that my husband liked it, but didn't RAVE about it. Oh yeah, I used flour tortillas, instead of corn because that is what I had, but they turned out awesome too.

Mediterranean Medley Salad

FANTASTIC!!! I used red bell pepper, broccoli, cauliflour, carrots, cucumber, tomatoes, and basil. I'll be replacing green salad for this on many dinners. I'm sure I will be making this over and over again!!!
