Peanut Butter Chip Chocolate Cookies

Yum! I substituted 1/2 c sugar for peanut butter - ended up with a combination of grocery store brand and an unsweetened natural brand. I ended up slightly reducing the amount of pb chips, since there seemed to be a risk of getting more chips than batter. They came out amazingly fudgey, puffed up, and delicious! I took them out while they seemed uncooked, but after a couple of minutes they were firm yet still wonderfully moist.

Slow Cooker Chicken Mole

Delicious! I do think that some of the other reviewers are more sensitive to spice than I: I used two chipotle chiles, and plan to use at least 4 next time for a decent level of heat. I pureed the raisins and chiles in a food processor because I don't love the texture of whole raisins. I used a bit of the tomato to add liquid. I specifically used sweetened peanut butter, and did not add sugar, which gave me the perfect sweetness. Overall, delicious. I can't wait to make it again!
