Brown Sugar Meatloaf

This is the best meatloaf I have ever had or made. The brown sugar is what does it! I ran out of ketcup so I ended up using half BBQ sauce/half ketchup and it was fantastic. I may just do that on purpose next time! For those reviewers who didn't like the idea of the sauce on the bottom, you are mistaken! The sauce on the bottom marinates the meat almost thoroughly because its melds with grease (necessary for juicy meatloaf) and keeps the meat moist and flavorful. Putting the sauce on top only allows the oven heat to dry it out. Trust me. Don't change anything about this recipe! I will never use another meatloaf recipe again. Oh and one last thing, I always serve with mashed potatoes!

Orzo with Parmesan and Basil

I LOVED this! I did not use the basil because I did not think it would go well with my meal. But it was fantastic and FULL of flavor. I will make this again and again.

German Chocolate Cake Frosting II

I followed the instructions exactly but it did come out very runny. I'm giving it 4 stars because the taste was great and I think it has potential. Next time, I think I will allow the liquids to come to a boil for a bit allowing it to thicken, like others suggested. Then I will probably also wait for it to cool before frosting (so that it's warm, but not still hot). Also, my brother ate it and suggested grounding the nuts finer and using less nuts and more coconut. I think this would make it easier to spread.

Sweet, Sticky and Spicy Chicken

Loved this recipe. I made this last night and my hubby asked me to make it again tonight! That NEVER happens. I also used the sriracha (rooster) sauce and it gave it the perfect amount of kick! Like others, mine did not thicken up at all. So next time I think I will do as other reviewers suggested and dredge the chicken in flour first. Also, like someone else said, it was a tad too soy saucey (salty). Next time I will reduce the soy sauce a bit. Oh and I loved the suggestion to add vegies! Looking forward to making this again!

Mostaccioli

This was a huge hit with my family! Everyone was asking how I made the sauce. My slight variations: I put the peppers and onions into the food processor to make a smoother sauce. I used spicy sausage and I also used much more cheese. Finally, I put the whole pasta mixture in a baking dish, topped with more cheese and baked it at 325f for 20 minutes.

Slow Cooker Oats

This is simply delicious! in my version, I cut out the sugar because it just doesnt need it with all the other goodies in there. The apple is just a genius idea! I also used coconut oil instead of butter. Oh and last but not least, I made this in my RICE COOKER!!!! My slow cooker is much too large to put a single or double serving of oatmeal, so my husband suggested the rice cooker. I threw everything in when I woke up and it was ready to eat after my shower. Ive made it the last 2 days, always making enough for my mid morning snack as well. I am just so incredibly happy to have found a way to make steelcut oatmeal so easily!

Angel Chicken Pasta

Loved this!! The flavorful sauce reminded me of something I would order in a fancy Italian restaurant! I will surely make again! Thanks for sharing!! PS. It was just as good with whole wheat spaghetti (hubby doesn't like angel hair). I would however like to know how to get the cream cheese to melt down completely. I had it at room temp when I added it, but still left with chunks.

Peanut Butter Cup Cookies

We LOVED these. They are simply delectable! A couple tips - Freeze the mini peanut butter cups before using them so they don't fall apart. Also, let these cool long enough before taking them out of the pan. If you're in a hurry, put them in the garage or freezer to cool faster.

Chicken Fettuccini Alfredo

My picky husband and I loved this! I was shocked. It was perfect. The only thing I did differently is I didn't have Italian seasoning so I made my own by mixing basil, oregano, parsley, salt, and pepper flakes (1/2 tsp ea but that was for 3 breasts). It gave the chicken the PERFECT seasoning. Also, I only used 3 breasts, but that was plenty for us. I will make it again for sure!

Black Magic Cake

All I could say after the first bite was WOW!!!! The only thing I did differently is I used coconut instead of vegetable oil (I always do this. It's healthy oil). And I also made it as a bundt and topped it with homemade German chocolate frosting from this website. Soooo moist and just to die for. I can't stop eating it!

Brown Rice and Black Bean Casserole

This was delicious....with quite a few variations. I decided to go with a southwestern theme by using yellow peppers and corn instead of zucchin-mushrooms/carrots. I used coconut oil instead of olive oil (olive oil becomes a carcinogen when cooked), doubled the rice, doubled the onion, added a large clove of garlic, cut up 2 fresh serrano chiles instead of the canned chiles, and used a jack/chedder combo instead of swiss. I didn't measure the cheese, but I'm sure I used more than 2 cups. But hey, I added more rice, so I had too.

Potato Chip Chicken

This was fabulous! What a fantastic substitute for fried chicken! I was really surprised how crunchy of a coating the chips made. I also didn't think the marination made any sense (since the butter just hardens in the fridge). So I salt and peppered the chicken along with some garlic powder, then dipped the chicken in melted butter and immediately rolled it into the finely chopped chips and then baked. Note, if you pound out your chicken, like I do, 45 minutes is a bit too long for cooking. Next time I will probably check it at 38 or 40 minutes. Lastly, I only used a pound of chicken, but still found I needed closer to 4 cups of chips. But my (picky) hubby and I loved it at first bite!

Fantastic Chicken Burgers

OMG, I just made these and they came out awesome!! You MUST try them. When we fired up the grill, it started raining, so I just fried them in a pan with some oil. Also, I only made 4 burgers, not 8. If you made 8, they would be too small for sure. We served them on the torta rolls from Costco (toasted in a pan w/ butter). As some others did, I used the juice from the whole lime and a bit more of the seasoning mix (to be safe). I also used ground chicken thigh meat (rather than breast). I'm sure that, along with the extra lime juice, contributed to why they were so juicy. Next time I will top with guacamole or avocado slices. Oh, and hubby didn't like the idea of topping it w/ salsa so he used ketchup (yuck, I know) but said he would try BBQ sauce next time. Oh and he hates cilantro so I didn't tell him I used it and he never even noticed. Ssshhh. Thanks Tozenuf for this fantastic recipe. So juicy and yummy! Will make again and again!!

Springtime Spaghetti

This was really good. Even though I used a full cup of cream, I found the sauce was a bit thick so I added about a half cup of milk to thin it out, which also made more of the sauce. So I also ended up adding about 1/4 cup more Parmesan. Like other reviewers, I added salt and some lemon pepper. Lastly, like another reviewer suggested, I fried up some chopped bacon and added that to the sauce, making it an entree. As an entree, it only served 2 of us.

Penne Pasta with Veggies

I also thought this has a great flavor, but it was too greasy/ oily. And i didnt even use any olive oil. I did not drain the sun dried tomatoes because the instructions did not say to do so. So I had to mention this as a caution to others. I would also use less butter next time. Lastly I didnt have time to bake it, but I also didnt find it necessary because all my ingrdients were still hot when I mixed them together.

Restaurant-Style Potato Skins

These were incredible!! My only complaint was they were a bit greasy. Perhaps they are they are supposed to be like that. But I think next time I will fry them for less time. Anyway, I took them to a superbowl party and they went fast!!

Chicken Breasts in Caper Cream Sauce

Excellent!!!! The flavor is so rich and wonderful. I too felt the need to double the sauce the second time I made it (hubby liked it but said it needed more sauce). Meaning, I doubled the butter to 6 TBS and added a couple of fresh minced garlic cloves. The heavy whipping cream was increased to 8oz. I also deglazed with 1/4 cup white wine. Thickening took quite a bit longer than 2 minutes. Lastly, I squeezed half of fresh lemon juice. Served with rice!

Broccoli Chicken Delight

This was awesome! The only variations were, I used 1 can of cream of mushroom and 1 can cream of chicken. I also only used 12 oz of fresh broccoli instead of 16 oz. The dish looked so full after just the 12oz bag so I stopped there. It was perfect! This was a keeper for sure!
