Six Can Chicken Tortilla Soup

Reviewed: Nov. 17, 2012
I used cheddar cheese soup (Campbell's) instead of cream of chicken, as one other reviewer mentioned, and it came out great! I think the cream of chicken would have made it too... chickeny?... if that makes any sense. I also used one chicken breast, shredded, added a full carton (32 oz) of chicken broth, and then just thickened the soup up at the end with a little cornstarch and water. It definitely needed cumin, chili powder, and garlic powder to jazz it up. Very yummy.

Buffalo Style Chicken Pizza

Reviewed: Oct. 17, 2012
I would say definitely do not use an entire bottle of blue cheese dressing.... just use enough to coat the crust, which is likely about 1/4 of the bottle. I then top it with the chicken mixture coated in hot sauce and butter, and some sliced onions and garlic powder. The result is great with those few tweaks... but, to each their own, right?

My Crab Cakes

Reviewed: Mar. 19, 2013
I did make some changes per other suggestions, and they came out fantastic! I used two cans of lump crab meat, two eggs, and two tbs of mayo, and the rest of the recipe ingredients remained as written. I don't know why some people say 8 oz. of crackers is two sleeves, it was only one sleeve for me and it worked out perfect with the added crab and egg. I think they definitely would have been too dry if not for doubling up on the wet ingredients, though.

Spicy Chicken Thai Soup

Reviewed: Apr. 18, 2013
Fantastic soup as is, but found using one can of coconut milk was fine (instead of two). And to the person who said to use half a tube of Gourmet Garden lemongrass and half a tube of Gourmet Garden minced ginger... Do you realize that equals over 20 tsps of each? I agree it is okay to use the tube stuff, but you only need a few tsp, not half a tube! That would ruin the soup for sure.

Creamy Chicken on Linguine

Reviewed: May 2, 2011
This was very tasty... I halved the recipe except for the sauce, since wanted it for 4, not 8. I kept the sauce for 8 based on other reviews that there wasn't enough. I put all the sauce ingredients into a blender and blended it for 30 seconds to incorporate the cheese and onions well, then put it back into the sauce pan to heat it up. It was great. Will put this in my recipe box.

Kung Wow Chicken

Reviewed: Oct. 10, 2012
I had to laugh at the comment that you need a prep-chef for this. It is so easy to prepare... the cutting of the veggies takes 3 minutes. The rest is just measuring ingredients for the marinade and sauce. Very easy recipe and tasted great. Only change I made was use pea pods instead of zucchini and added the tbs of cornstarch to the chicken broth instead of adding water. It was great and I will definitely be making it again many times!

Baked Garlic Parmesan Chicken

Reviewed: Apr. 29, 2011
I did not think this recipe was great on it's own, although perhaps if it had a sauce it could have shined. I think it would be great as the base to Chicken Parm... just put some marinara and provolone or mozzarella over it in the end and it would be great. As is... it was just breaded chicken to me. It was moist and garlicky, though!
