Spicy Chicken Thai Soup
Fantastic soup as is, but found using one can of coconut milk was fine (instead of two). And to the person who said to use half a tube of Gourmet Garden lemongrass and half a tube of Gourmet Garden minced ginger... Do you realize that equals over 20 tsps of each? I agree it is okay to use the tube stuff, but you only need a few tsp, not half a tube! That would ruin the soup for sure.

My Crab Cakes
I did make some changes per other suggestions, and they came out fantastic! I used two cans of lump crab meat, two eggs, and two tbs of mayo, and the rest of the recipe ingredients remained as written. I don't know why some people say 8 oz. of crackers is two sleeves, it was only one sleeve for me and it worked out perfect with the added crab and egg. I think they definitely would have been too dry if not for doubling up on the wet ingredients, though.

Six Can Chicken Tortilla Soup
I used cheddar cheese soup (Campbell's) instead of cream of chicken, as one other reviewer mentioned, and it came out great! I think the cream of chicken would have made it too... chickeny?... if that makes any sense. I also used one chicken breast, shredded, added a full carton (32 oz) of chicken broth, and then just thickened the soup up at the end with a little cornstarch and water. It definitely needed cumin, chili powder, and garlic powder to jazz it up. Very yummy.
