Dark and Moist Zucchini Cake

I was excited about this recipe because I love zucchini bread and was looking for a healthier variation. I have to admit the flavor was good, even without nuts or vanilla (which I didn't have on hand). However, even after baking for over an hour, the loaves sank and I found they were still partially raw inside. Guess my toothpick wasn't long enough! There was still enough "baked" in one loaf for me to enjoy, though.

Orzo with Mushrooms and Walnuts

Yum, that's all I can say. I didn't find white mushrooms, so I used portabella. Therefore the sauce was a little, shall we say, gray. But the flavor was awesome! It was a little too involved to cook on a regular basis, but I made it for our anniversary and we both enjoyed it.

Champagne Chicken

Turkey Pot Pie I

I used this filling but put it into individual pot pies and froze them. Then all I had to do was pull them out and bake them for dinner. It made about 6 pot pies, and was a quick, yummy dinner!

I didn't have egg substitute so I made this with only one egg. The flavor was wonderful and the texture is so soft and moist - you wouldn't know this was healthy!

Slow Cooker Chicken Taco Soup

Blueberry Crisp II

Easy and tasty, used half oatmeal and half flour instead. Topping turned out like a thick dough instead of crumbly, so that's why I gave it four stars. It ended up more like a blueberry cobbler. Next time maybe I'll have to add more flour to get it to crumble.

Fluffy Whole Wheat Biscuits

Great, but like other reviewers stated, I haven't found a way to use the entire amount of milk and not have to add more flour. This last time I used approx. 3/4 cup of milk and they came out great.

Hearty Breakfast Cookies

Love these cookies! I had been looking for an alternative to purchased breakfast cookies (which I love). So I tried these, this is the 2nd time I've made them. This time I substituted a container of plain lowfat yogurt for the butter (last time I tried applesauce and they were too dry). I also baked them a little less so they would stay a bit moister. Added extra raisins and chocolate chips, and a little handful of coconut. They are awesome!

Terrific Turkey Meat Loaf

Yum! Made it almost just as described. Used Italian bread crumbs instead of oat bran, and didn't have quite all the seasonings, but it was delicious! My boys ate it up (and they are pretty picky eaters!)
