Dark Chocolate Cake I

Reviewed: May 28, 2005
I didn't really like the taste of this cake. It didn't taste like chocolate, it tasted like fake chocolate. And it could have been more moist.

Peanut Butter Frosting

Reviewed: May 28, 2005
I followed TRindell's recipe and threw in some Reese's cups pieces. It was absolutely wonderful. Saved my not-so-great chocolate cupcakes!

Black Magic Cake

Reviewed: Feb. 13, 2005
My first "made from scratch" cake ever, made for my new husband for Valentine's Day, and we both just loved it! I made it exactly as the recipe stated, and iced it with chocolate cream cheese frosting from this website.

Sweet Corn Cake

Reviewed: Nov. 27, 2004
I made this twice this Thanksgiving holiday. The second time I made it I doubled the batch, and in an 8x8 that means double the cooking time. Everyone LOVED this recipe and so did I. I will be putting this into regular rotation. Thanks!

Homesteader Cornbread

Reviewed: Nov. 27, 2004
Not crazy about this - the taste was bland and the texture was not as nearly as moist as I wanted it to be.

Crab Stuffed Mushrooms III

Reviewed: Nov. 16, 2004
The filling is good. I added some shredded parmesan and some shredded mozzerella to it, as well as the chopped up mushroom stems and some finely chopped spinach for a splash of green color. I was not crazy about the actual mushrooms that the filling sat in. I think I left them in lemon juice too long (did not wash them in water, that's just silly) and they took on a lemon-y taste that I just didn't like. I think I would try a very light saute in butter for the mushroom bases the next time. I will definitely try this recipe again. I would leave the celery out next time because celery is just s strong flavor that I don't really like, and I would add some chopped roasted red peppers at Christmas to have red and green in the filling.

Bake Sale Lemon Bars

Reviewed: Nov. 16, 2004
These are okay, but the presentation was not quite what I wanted it to be. There were bubbles in the lemon parts, and the crust isn't as tasty as my grandmother's bars were. I will keep looking for other versions of this until I find perfection! I will say, however, that my husband and my co-workers had no problem polishing them off!

Irish Cream Bundt Cake

Reviewed: Oct. 28, 2004
This is great! I took one of reviewer Linda Mclean's ideas and put 1/3 of the batter into a pot of melted chocolate chips, mixed it all together, and then sandwiched that layer in between two layers of the regular batter to make a chocolate swirl. That turned out very pretty! I didn't make the glaze for this cake, we served it with ice cream instead. Also, I left out the nuts, as my husband doesn't like nuts. Will make this one again!

California Salad Bowl

Reviewed: Oct. 21, 2004
This was okay, a little weird. I didn't put the green onions in, used yellow peppers instead. I also did not put the corn chips in as I am doing low-carb, so I crumbled a few whole wheat crackers in, which was fine. The dressing was what threw me. Everyone raved about how good it was, and it was all right, but really, really rich. I didn't feel like I was eating healthy since it was so thick and gooey tasting.

This was pretty good. I brought it into work in my mini crock pot with toast points and tortilla chips. It was all gone by the end of the day.

Lowcountry Shrimp and Cheese Grits

Reviewed: Mar. 21, 2004
This was great! I've been meaning to make this forever, because I've always enjoyed shrimp and grits in restaurants when I order it. This tasted different than the way I was used to, but still very good. I did as a previous reviewer suggested and made my grits with chicken broth and milk, and put a little chicken broth in with the oil and butter to sautee the shrimp also. I threw in some asparagus with the shrimp and tomoatoes that I had sitting around, and fresh crushed garlic in both the shrimp and grit pans, and I used Velveeta as the cheese for the grits. I will definitely make this again!

Chicken Parmigiana

Reviewed: Mar. 20, 2004
My fiance said "yum, yum yum" the whole time we were eating! And he said it's better than the kind he loves at a restaurant we go to. I double dipped the chicken in the breading (which I had also added parmesan to), then I browned the chicken in a skillet with olive oil and fresh garlic, then baked the chicken in the oven with sliced mozz and parm. Didn't add the sauce until I served it - I heated the sauce in a pan and then just put it as the base on the plate. I'll definitely be making this one again and again!

Double Layer Chocolate Peanut Butter Pie

Reviewed: Feb. 14, 2004
My fiance and I both love peanut butter and chocolate. However, this pie has stayed in our fridge since we had the first slices. This recipie is much too rich, to the point of being inedible for us.
