Chicken Parmesan

Delicious! I didn't need to use the whole cup of olive oil to saute the chicken. I just drizzled olive oil in the pan and added more as needed.

Eggplant -- Easy, Good and Tasty

This turned out delicious. After breading, I sprinkled freshly grated parmesan cheese on each piece. I poured a little balsamic dressing over some of them to try, and it was tasty. I used Italian style Panko bread crumbs. I chose not to use the tomatoes. I'd make again!

Toad In a Hole

My mother always made these for me as a kid, although she calls them "Powder Puff Eggs." We use a small juice glass to cut the hole in the bread. We have never put cheese on ours, but it sounds like a good idea. It's also fun (and tasty) to butter and fry the "hole" you cut from the bread too. I also recommend flipping and frying your "Toad in a Hole" on both sides to cook the egg sufficiently for kids. For those adults who prefer their eggs "over easy," this is a delicious and easy way to make them. When you cut into the bread, the yolk spreads to the bread. You must try this simple homey recipe!

Smushed Apples and Sweet Potatoes

What a recipe! Do not hesitate to make this. I know everyone says this, but my picky 7-year-old son just tried one bite and then asked for a bowl of it. (He has never eaten sweet potatoes until this recipe.) This dish does taste like pie. I used twice the amount of sweet potatoes (about four medium), but used only one tablespoon of butter and 1/4 cup sugar. I didn't have a Granny Smith apple, but used three small McIntosh. This is so good! What a great idea to combine apples with sweet potatoes.

Quick and Easy Monkey Bread

What an easy, tasty recipe. The four adults and four kids finished them quickly. As a suggestion, place the nuts on one half of the pan for those who don't like them. It would be worth baking these just for the aroma alone!

Apple Carrot Muffins

These muffins are easy, moist (using very little fat) and are very flavorful. Although my 7-year-old son didn't like seeing the grated carrot in there, the rest of us enjoyed them. I would make these again.
