Panera's Lemon Chicken Orzo Soup

Reviewed: Feb. 5, 2012
Very good soup! I think it had too much Orzo in it; perhaps the 1 cup is of "cooked orzo" - 1 cup of raw orzo ends up making A LOT of orzo and not much broth. Very lemony! My youngest daughter didn't like the lemon flavor so I'll scoop out a bowl for her before adding the lemon in the last step.

BBQ Potatoes with Green Onions

Reviewed: Jun. 21, 2009
Very good and easy! We used red skin potatoes and Lawry's Seasoned salt instead of the salt/pepper. Very good!

Oatmeal Whole Wheat Quick Bread

Reviewed: Jul. 16, 2008
The first time that I made this I followed another user's suggestion to add 1/2 cup ground flax seed and the result was extremely dry, crumbly bread. I made it a second time and did not add the flax seed and also increased the honey to 2 TBL and baked it in an 8" square stoneware dish and it was AMAZING! The bread was very moist and not at all crumbly or dry. When I make it again I will try adding 1/4 cup (or less) of the flax seed and see how it effects the bread. I'd love to add the flax (for the health benefits) but 1/2 cup is too much. Perhaps lowering the flour or oats to compensate for the extra flax may work too! Some reviewers have mentioned that the dough was too runny but I did not find that to be the case. I would hesitate to add additional flour because you may end up with dry, crumbly bread! Great recipe otherwise!

Henry and Maudie's Oatmeal Cookies

Reviewed: May 3, 2008
Wow! Very good cookies! I used 1 stick of butter (1/2 cup) and 1/4 cup of applesauce. I also added 1 TBL of cinnamon to the dry ingredients. Then I divided the dough into three parts and made one part with any add-in's, one part with Craisins and one part with Reese's Pieces. All three were delicious!

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Dec. 5, 2007
WOW! Words cannot describe how WONDERFUL this recipe is! I was worried by the number of reviewers that mentioned that you could really taste the "red wine" in the end result so I substituted beef broth for the red wine. I was out of soy sauce so I also substituted with 2 TBL of Worcestershire sauce. Very good meal! We used the extra sauce as a dipping sauce along with the meat. Very moist and tender!

White Sauce for Pasta

Reviewed: Dec. 5, 2007
Very good! I followed the recipe exactly, using Butter Buds sprinkles (found in the spice aisle...the kind you might shake on popcorn) and it was delish! I was worried that it would taste like "fake" butter (from the Butter Buds) but it had a wonderful buttery, creamy taste! I'm impressed that something so simple could taste so great!

No Roll Sugar Cookies

Reviewed: Nov. 10, 2007
These are so yummy! We've made them at least 4 times since discovering the recipe a couple of weeks ago! I was out of shortening so I substituted butter...they were good but a little flatter and crispier. The recipe yields about 24 medium sized cookies. I did not flatten the cookies before baking and they turned out great! We covered them in a simple powdered sugar glaze (powdered sugar + water) and they were great! I've used regular shortening, butter flavored shortening, and regular butter and they have turned out great each time!

Best Chocolate Chip Cookies

Reviewed: Nov. 4, 2007
I've used the Nestle Tollhouse recipe for years and always had problems with cookies that would spread too much and ended up crispy and thin. I am so pleased with this recipe! The cookies kept their shape nicely, the centers are chewy and moist, and the outside edges are crispy! Finally a chocolate chip cookies recipe that works!!!

Quick and Easy Peach Cobbler

Reviewed: Aug. 15, 2007
Very yummy and very easy! I did not have self-rising flour on hand but thanks to a previous reviewer I was able to substitute all purpose flour and 2 tsp. baking powder and it worked great! I have also divided this recipe in half and baked in a 2 round cake pans, using a different fruit in each pan. Recipe divides easily and provides other choices for the pickier eaters in our family!

Baked Oatmeal I

Reviewed: Jul. 20, 2007
Absolutely wonderful! I used Splenda in place of the sugar and applesauce in place of the oil. Tasted great! We are on our second batch of baked oatmeal and this time I added the crunch topping from the "To Die for Blueberry Muffins" on this site. AMAZING! It makes it a bit sweeter...more like a dessert or coffee cake but the topping is to die for. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over oatmeal before baking. It makes a lot of topping so you could make less to suit your taste!

Pork Tenderloin with Herb Sauce

Reviewed: Jul. 15, 2007
Amazing! I roasted the tenderloin in the oven at 350 degrees for about 45 minutes (or 450 degrees for 20-30 min). Remove the pork when internal temp reaches 150 degrees. Cover with a foil tent loosely and let sit for 10 minutes. The temp will rise an additional 5-10 degrees during this time. It was so juicy and delicious!

Simple Scones

Reviewed: Mar. 8, 2007
AMAZING! I've been craving scones so I decided to make them. My picky husband was skeptical but after trying one...he went back for THREE more! I did not add any fruit, instead I added 1 TBL cinnamon to the dough and then sprinkled cinnamon-sugar on top before baking. Absolutely divine! I'm making more today because the first batch was gone within one day!

Bread Pudding II

Reviewed: Mar. 2, 2006
SO good! This recipe is so easy, my 5-year old daughter bascially made it on her own (with a little assistance!) and it was delicious! We doubled the cinnamon and the vanilla and used a little extra bread and it was perfect! We also only put raisins in half of the recipe since not everyone in our family is a raisin fan. My husband is NOT a bread pudding fan but agreed to try it since my daughter had so proudly made it... HE LOVED IT and even had seconds! This recipe is excellent!!

To Die For Blueberry Muffins

Reviewed: Jul. 22, 2004
These muffins were wonderful! I was concerned that the batter was too thick but they turned out great! I also used frozen fresh blueberries and although they needed to cook about 10 minutes longer they tasted wonderful! Some previous posters thought that the recipe made too much crunch topping and while I was mounding it on top of the muffins I thought so too... until they were done and the crunch topping was perfect!! I definitely wouldn't change it! The recipe states that it makes 8 large muffins but I was only able to get 6 large muffins! This one is a keeper!!
