Cheesy Butternut Squash Pasta Sauce

This was really, really good! I did change it a bit because my guy was worried it would be too sweet, so instead of the apple, I used a little less than 1 can of crushed tomatoes, and it was perfect. I also roasted the squash in the oven at 350 for about an hour instead of boiling it, and added some basil and oregano. It ended up being comparable to the fancy-schmancy gourmet butternut squash sauce I get in the store on occasion. This is awesome, and you should try it.

Summer Herb Pesto

Whoa! This pesto is wicked delicious. Although, of course, I did do some modifications. I used a little extra spinach instead of the parsley, and added only a couple tablespoons (fresh) of oregano since that was all my plant had on it at the moment. Since pine nuts are crazy expensive, I substituted cashews in. I also added a little lemon juice as a couple people suggested. Okay, so maybe I didn't do a great job of following the recipe. But this came out better than I could have hoped for my first time making pesto!

Slow Cooker Chicken Mole

Super delicious and simple! I wouldn't quite say it tastes restaurant-style (at least not like the restaurants I've had it at), but it's definitely a tasty meal. I used fire-roasted canned tomatoes and it helped bring out the smoky flavor I'm used to in mole, although I didn't use coriander because I wasn't able to find it at my grocery store, for some reason. Still, it turned out fantastic, and I regretted making only half the recipe!

Sausage and Peppers Lasagna

I found this recipe in a Philadelphia cream cheese cookbook, and it is, by far, the best lasagna I have ever eaten. The cream cheese makes it so creamy and gives it a nice, gooey consistency, and overall it's a hearty and just plain delicious recipe. My fiancee and I have made it our "special occasion" dish because we love it so much. The only difference I make is adding a whole red pepper instead of half a cup of each, because I'm not a fan of green peppers. But really, everyone has to try this recipe at least once; it's decadent.
