Southwestern Egg Rolls

Like others, I used egg roll wrappers and stuffed with 2 tablespoons of the filling. I tripled the filling and had enough for 20. Lined a baking tray and sprayed the tray and rolls with vegetable oil, baked at 425 for 10 minutes, flipped and gave the other side of the rolls a quick spray of oil and baked for another 5 minutes. Served with avacado sauce. LOVED THEM!!!

Broccoli, Rice, Cheese, and Chicken Casserole

I was going to double recipe and so glad I didn't for my family of 6. Changes are: made 3 cups of rice and no butter (just because I forgot). We still have alot of leftovers and if you do want to double it, you will probably need two baking dishes. Oh, and everyone loved it! Keeper!

Sour Cream Cucumber Salad

This is like my grandmothers recipe. I grew up on this and love it. It goes great with almost everything- from bbq to meatloaf, sandwiches, and salmon to name a few. You can add whatever you like to this as well. I like to add some fresh tomatoes and dill for something different. Don't be afraid to try this!

Shrimp Lemon Pepper Linguini

I love this recipe. I would have used chicken broth, but since we don't eat meat on Fridays during lent I substituted it with vegetable broth. I also added mushrooms and 1/4 cup of half and half. I can't wait to make this again. Next time I might add chicken breasts.

Prosciutto Wrapped Asparagus

I loved this recipe and it was super easy to make. I read the recipe wrong and wrapped each individual spear. Next time I will make bundles. There were no leftovers either!

Barbecue Ribs

This is the best rib recipe I've ever tried. I did make a few changes though. As per other reviews, I used the BBQ Dry Rub by Denise and put that on the ribs the night before. I added cumin to this sauce (just because we like it) and I used Bacardi Limon rum because thats all I had on hand. They came out fantastic!

Barlow's Blackened Catfish

So good that I made this two nights in a row. I added some Old Bay Blackened Seasoning and reduced the Italian salad dressing to to 1/2 cup. Thank you so much for this great recipe!
