MMMMM... Brownies

I made these last night, and my boyfriend (who doesn't even like chocolate!) couldn't get enough of these! It really tastes so much better than the boxed mixes! The only ingredient I had to buy were the chocolate chips since I had everything else, and the recipe was so incredibly easy. The only thing I might do different next time is to whisk the eggs before adding to the pot and maybe add in some chopped walnuts. Thanks for my new go-to brownie recipe!

Chorizo Stuffed Bell Peppers

Loved this recipe! Made it with ground beef instead of the chorizo and cheddar instead of the 3 types of cheeses because that's what I had on hand. My boyfriend used the extra tomato sauce as a dipping sauce for the pepper. I will be keeping this recipe for future use!

Awesome Slow Cooker Pot Roast

This recipe was awesome! Since I was only cooking for 2 people, I followed sdgirl's advice, except I added the full onion soup packet instead of half. At first I was afraid it would be too salty, but it came out perfect! I cooked a bottom angus roast for 4 hours on high and 2 on low and the meat was incredibly tender. The gravy was one of the best I've ever had, and my boyfriend who doesn't usually give out compliments, couldn't compliment me enough on this meal! Definitely going into my weekend rotation!

Cocktail Meatballs

My family absolutely loved this recipe; even my younger brother who is extremely picky could not stop eating these! I browned the meatballs in the oven for the recommended time and then finished cooking them in the sauce in my dutch oven on the stove. These meatballs get cold quickly, so if you are serving these for a party it would be helpful to keep them warm in the sauce until just before serving. I was able to make about 20 small meatballs with this recipe, and had no leftovers!

Slow Cooker Texas Pulled Pork

I thought this recipe was pretty tasty, but like other reviewers, my sauce came out a little bit too thin also. After reading hallshire's review, I dissolved 2 TBS of cornstarch in a small bowl with 1 TBS apple cider as suggested and then dumped it into the sauce once the pork was removed. This did help to thicken up the sauce a lot; yet it still didn't look like the main picture. Maybe this was because I put the shredded pork back into the sauce as stated in the recipe, rather than just spooning it on? I think next time when I take the pork out to be shredded, I will still use hallshire's suggestion, but I will drain half of the liquid out first before adding the corn starch/vinegar mixture. I think I might also spoon the sauce over the pork, instead of dumping the pork back into the sauce so that I can control the amount and not have it be as "soupy". Still a delicious dish and highly recommended! To me this sauce is way more tastier than bottled barbeque sauce.
