Mediterranean Chickpea Salad

Great! I substituted mozzarella with feta and omitted the olive oil, seasoning & lemon juice - I just added some zesty italian dressing and it was yummy!

Stuffed Artichokes

Great recipe. The only substitutions I made were I used 4 slices of multigrain bread and 2 cloves of minced garlic and of course, extra virgin olive oil instead of veggie oil.

Butternut Squash Soup

I loved this recipe! I opted not to add cream cheese and instead scooped in a tablespoon of low fat sour cream. I also added a sweet potatoe. To speed up cooking time, I cut the squash lengthwise and cut up the sweet potatoe and microwaved it for 15 mins on high in a small dish with about 1 cm of water in it. It comes out soft. I just peeled it and used a potatoe masher in the pot to mash it all up. It was amazing!! Even my kids gobbled it up:)

The Original All-Bran® Muffins

GREAT EASY recipe. I'm looking to add more fiber into my diet so this recipe is wonderful. I made 24 muffins medium sized muffins without doubling the recipe and estimate about 3 grams of fiber in each. I added a cup of mini semi-sweet chocolate chips and 1 tsp of vanilla. I also cut back the baking time to 18 mins which I think is perfect. My kids also loved 'em. They won't last long! Thanks!

Tomato-Curry Lentil Stew

Great recipe! Definitely double, if not triple this recipe. Also, I had to simmer it for more then an hour for the right lentil tenderness. I used chili sauce instead of tomates and it was very tasty!!

Peanut Butter Cup Cookies

Great recipe. If you have a sweet tooth, this cookie is for you. It's definitely a rich/sweet cookie. My batch made me 32 cookies. I froze the cups ahead of time. The only problem I had was that a few of them got destroyed while trying to take them out of the mini-cupcake tin. The ring around the cup would fall apart. I think I tried to take them out too early so make sure they cool COMPLETELY before taking them out so that you don't end up having a bunch that are destroyed.

Chewy Coconut Cookies

Great recipe. I did make a few changes though. Increased the coconut flakes to 2 cups, increased the vanilla extract to 1 tsp, added 1 tsp of almond extract, add 1 cup mini chocolate chips. My batch made me 3 dozen cookies about 2" big. 12 mins bake time made the PERFECT cookie!

Coconut Macaroons III

PERFECT! I used parchment paper and added 1 tsp of almond extact. My batch made me 25 golf ball size cookies. I will definitely be using these in my xmas cookie exchange this year! Thanks for sharing!

Chocolate Mint Cookies I

I just made these and they are awesome!! My family is a big fan of mint/chocolate flavour so it's a big hit here at home. I followed the recipe as is and this batch made me 55 cookies - about 2" wide. I am including these in my xmas batch this year!! Thanks for sharing!!

Saltine Toffee Cookies

Yum, yum, yum!!! I think i've made about 6 batches over the xmas holidays. I used milk chocolate instead of semi-sweet...just a preference. Very verstitle recipe. I also made a batch with crushed candy cane. This one is a keeper!!

I used this recipe on the Big Soft Gingerbread Cookie recipe found in allrecipes and it worked great!! I also used 2 TBSP of milk instead of 2 TSP - makes and easier consistency. Thanks for sharing!!

Chocolate Toffee Crunchies

I followed the recipe but I couldn't find vanilla wafer crumbs so I used graham crumbs and it worked great! good flavour! Tip: to speed up the process of it hardening, pop the tray in the fridge for about an hour and then cut them, that way you can enjoy them quicker! :)

All-Around Good Smoothie

Great smoothie recipe! I omitted the honey (I found it sweet enough) and used ff vanilla soy milk. I think this will be my new morning meal before I hit the gym!! Oh, don't forget to either grind your flax seed (your body does not digest whole flax), buy it already ground or just use the oil. Cheers!
