Baked Coconut Shrimp

Exceptional! I lean towards veganism but every so often I indulge in wild-caught seafood (and apparently eggs). I used smaller shrimp (my mistake) but it had no effect on the over recipe except that I had that many more to batter. I served it with the Fruity Curried Lentil Salad on this site. The whole meal took me one hour to prepare and I ate my share in 4 minutes flat.

Fruity Curried Lentil Salad

I made this as a side dish for baked coconut shrimp. I wish I would have put more pineapple and pecans in it. I used garam masala powder and so it turned out pretty sweet. Overall, its an excellent dish. Also, I added some coconut oil before I served it and it made it that much better.

Soft Chocolate Chip Cookies II

I made these for a friend who was in the hospital after a bike accident. His face was hurt so he couldn't chew much. These are exceptional! So delicious! Warm them in the oven and serve with vanilla ice cream - decadent!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This made A LOT and I got sick of eating it after a while. I tasted it before I pureed it and was super excited, it seemed so yummy! Then I pureed it and it was still good, just not as good. I would make this again, as a winter soup, but I wouldn't puree it. This soup is extremely hearty - a small amount will totally fill you up.

Homemade Black Bean Veggie Burgers

my new years resolution is to go vegan so ive been doing it bit by bit. my friend, who lives a few houses down, has chickens, though, so i do eat eggs from there. thats what i used in this recipe. i had to nearly double the amount of breadcrumbs, fried one and then decided i need still more breadcrumbs. i also added salt and in addition to the chili sauce, i loaded it with sriracha sauce (i really like spicy!) i also added chopped onion and green pepper to the mixture which added a nice texture. topped with vegan cheese in between two pieces of gluten free toast. i only wish i had some salsa with this and maybe a slice of avocado. it made way more than the four servings but now ive frozen them to eat throughout the week and share with friends.

delicious! i serve it over a chopped salad of broccoli, cauliflower, red, green, and yellow bell peppers, tomatoes, black beans, and avocado. very healthy and so yummy and filling!

Spicy Vegan Potato Curry

im just getting into cooking and i like making things in large portions so i can have them ready to bring to work. i tried this recipe which was simple enough (and taught me about letting the onions soak up the flavor, etc.) it was pretty tasty, i should have added more salt. i used sweet potatoes because theyre overall healthier. i had a lot left and came home with a group of friends after a night of rock music and beer and shared this with them. they absolutely loved it.

Quinoa and Black Bean Chili

i adapted this a bit, for instance, i put way more chili powder and i put the whole can of chipotle peppers in it - maybe a bit too spicy but i still loved it. next time i want to try cooking the quinoa in vegetable broth. this is absolutely delicious! so satiating and easy! it came up as 10 servings (wow!) so i was able to freeze a lot of it and portion it to take to work for lunch. what a great time saver and money saver. and infinitely healthful! one of my first ventures into cooking on my own and it was so good i feel so encouraged! thanks!
