Three kids, a wonderful husband, a dog, and a cat. What else do you need? Maybe a little more time in the day! I spend most of my time playing and cooking with my kids, and it is time well spent! We have a very diverse menu in our house, we eat thai, greek, korean... I love exposing my family to new foods!
My favorite things to cook
I love to bake! I think I've found the perfect chocolate cake. I make a pretty great greek meal too. It's more out of necessity, since we don't have any greek establishments in our litte town.
My favorite family cooking traditions
We make an awesome breakfast on the weekends when dad's home, everyone gets in on it! My daughter and I make the best cookies. We make a simple butter cookie dough and cut out various shapes. I think we have like 200 cutters in just about every shape. Then we make a few different colors of frosting and go to town!
My cooking triumphs
My Christmas Prime Rib, Chicken Pot Pie, Bread Pudding and Tiramisu Cake. I've also learned to burn and cut myself a lot less over the years!
My cooking tragedies
So, so many... I was horrible with pancakes for years! For some reason I just couldn't get the hang of them. I'm over it now, but it took a while. I also go back and forth with roasts, mainly chuck roasts in the crockpot...they always end up really blah. So, I stick with the traditional oven roasting and a better cut. But every now and then I decide to try again and it always ends up greasy and gross!

Indian Tacos with Yeast Fry Bread
I've only made the fry bread, but about half a dozen times. It's the "money" part of the recipe, honestly! The rest is for the person eating the taco to decide. I'm a fan of my refried beans, guacamole and cheese. When we're done eating dinner, I shake the leftover fry bread in cinnamon and sugar. The bread is amazing!

Brown Sugar Meatloaf
I do like this recipe, a lot. I've made it according to the recipe and I find that the amount of grease depends on the ground beef you use, obviously. I cook mine on a cookie sheet with sides. I shape it and place it on a few pieces of bread on a cooling rack in the pan. The bread absorbs grease and keeps the meat from falling into the spaces. If the bread is thin I'll put some foil under it, making sure its the size of the loaf so the grease drains off. Everyone loves my meatloaf. I do add a good bit of onion and garlic powder now since I decided it made it even better. All in all, it's a really solid recipe. I just tweaked the method.

Buffalo Chicken Dip
Oh my, my, my... This was amazing! Made this for game day snacking and couldn't get over how good it was. My husband was super happy too. Like others, I used chicken breasts that I baked just prior. I also made my own ranch dressing. Other than that I followed the recipe as stated. Part of me is a little sad. Now we won't be able to live without this, there goes my favorite jeans...
