About this Cook
I love to bake and cook. Allrecipes is the site to find the recipes that allow me to do just that. Being in the kitchen gives me a creative outlet.
My favorite things to cook
I love to bake. Also cooking things that smell scrumptious in the oven all day long.
My cooking triumphs
I believe most of my triumphs in the kitchen are due to this rule.. 1) Never try a recipe for the very first time when you are expecting company.
My cooking tragedies
I suppose my most despised mishap is when I make a mess of the oven.

Lime Creams
Citrus was nice with shortbread. I whipped the butter and sugar for 4 minutes till it was fluffy. The shortbread melted in my mouth and wasn't too sweet. Decided to double the zest in the filling and wished I had used zest in the cookie dough as well but...next time for more of a lime punch. Used Wilton's Christmas Green food coloring but only touched 1/2 an inch of a toothpick to the coloring with no scooping action. That was all that was needed for me to get a lime-ish green. It was a nice color before adding the food coloring with the specks of zest so it could be omitted completely. The filling is sweet enough. Great with coffee and tea.

Jalapeno Pesto
We adore this pesto. Used fresh ingredients from my garden. This pesto is a five star recipe. Just a tad of heat on the back of your tongue. Not too spicy so you could add more jalapenos if you like. I did add the zest of one lemon. So glad I stumbled upon this recipe. Can't imagine why I didn't think of tossing a jalapeno into pesto before because if it grows together it goes together. Really great on white pizza.

Whipped Frosting I
Mmmmm This frosting is delicious. Used the whisk attachment with my stand mixer. I creamed the butter and shortening until it almost looked like whipped cream. Then added the sugar slowly about 1/3 of a cup at a time and whipped and whipped until there was no more grainy texture. The flour mixture seemed easy enough to make but I had to stand there and stir so to avoid lumps. I cooled the flour mixture in a water bath and then added it slowly to the butter/shortening/sugar mixture. I added a pinch of kosher salt. When that mixture was combined it was perfect. I've frosted a cake with this and piped it on a key lime pie. Piping this was easy for me. I did store this in the fridge. It kept well for a couple days perhaps it would for a couple more but thinking it does have milk in it so... The next day this frosting tasted even better. Not too sweet with a nice mouth feel. This frosting is super yum
