Kale Krisps

i can't not make this when i get kale in my csa box. so easy and so yummy. the hardest part is cleaning the kale, which can be kind of tedious. be careful not to overcook, it takes less than a minute for these to go from perfect to burned. sometimes i'll chop up leeks or spinach and add it to the kale, or sprinkle it with garlic salt for more flavor.

Collard Greens and Beans

the first time i made this i followed the recipe exactly and it was ok. it was my first time with collard greens and i wasn't sure what to expect. the next time i made it i used chicken stock instead of water and after i cooked the bacon i left it out until the end to sprinkle over the finished collard greens. i like the texture of bacon to be nice and crispy, it seemed soggy to me when i did it following the recipe. my boyfriend and i enjoyed it both times, but the second time was much better for us. i served it over brown rice.

Graham Cracker Crust I

so easy and so good. i used this recipe for a key lime pie (without the cinnamon) and it was perfect. i used saran wrap to pack it in nice and evenly and get a smooth finish. i cooked it a little longer, about 10 minutes, for a nice crisp crust. the first time i used it i let it set overnight and it had a firmer texture, which i liked. the second time i put my pie filling in it not long after it had cooled and although it got rave reviews i felt like the texture was more to my liking the first time.

Key Lime Pie VII

i read so many reviews that said to look no further for the best key lime pie that i did. and they were right. every time i make this pie people are amazed by it, especially since it doesn't have any gelatin in it. good flavor, perfect texture, and amazingly easy. make sure you let it chill long enough to get a nice firm texture. i always try to make it the night before so it can stay in the fridge overnight.

Butternut Squash Bake

this is always gets finished when i bring it to a potluck and people want more. there is so much flavor, it is so easy, and so versatile. most of the time i don't even use the thyme because i don't have it on hand. it tastes great with leeks too, for a more mild onion flavor component.
