Basic Ham and Bean Soup

Amazing! I omitted the celery and carrots (not a fan) and it was so good. Like someone else said, it was even better the next day. Next time, I'll make it a day ahead. Making it in advance and refrigerating it also gives you the chance to skim off the fat before reheating...a little healthier. I didn't save any leftovers for my husband. Oops.

Easy Garlic Green Beans

Easy and delicious - a quick, easy side dish. I also tried it with fresh broccoli instead of green beans and use Pam instead of butter. Yum.

Pizza Dough I

Broiled Parmesan-Lemon Tilapia

Wonderful. I've made this many times. Now I halve the butter and use fat-free plain yogurt instead of mayo. I've used all different kinds of white fish. Really good.

Chicken with Tomatillos and Poblanos

So good! I mix and match my peppers but it always comes out well. I've also experimented with baking the chicken and then dumping the mixture on top. Not as much flavor but still good and better for us.

Easy Zucchini Soup

I'm trying to eat healthier so I wasn't excited about the stick of butter. I minimized the butter to 1 TB instead and added an extra tsp of chicken base to make up for the salt in the butter. Amazing! Next time, I'll omit the butter altogether and add a dash of cayenne and pepper. I served this with sour cream and chives on top. Highly recommend! And without the butter, this is seriously low-fat/low-cal!
