Jamaican Fried Dumplings

i agree the key to these is to make them flat. i served these with a whole bunch of Jamaican foods and they were delicious. super flaky. crunchy. great texture. these are great for parties and holidays and all but not for every day healthy eating. lol. everyone loved them.

English Toffee

I've made this recipe several times. it is perfect every time. one of the keys is to cook this until it is hard candy. i've been making candy for years from old recipes - some handed down from family. i was taught to test the candy in a cup of cold water. this means when you think the candy is done down a bit of it into cold water. when it is crunchy in the cold water you know it is done for toffee. this IS just at that point where the color of the candy/caramel changes and starts to darken. pull it of NOW. : ) i pour this into a rectangle cake pan lined with parchment paper. then i add whole roasted almonds - a few scattered and pushed in so that they are inside the toffee. : ) then i do put the chocolate chips on top while it is hot. this works perfectly. a few minutes later the chips are melted and i use a spatula to spread the chocolate over all of the toffee. after this i quickly sprinkle chunks and ground up roasted almonds. i put the almonds in the food processor and pulse so there are some big chunks and some small and some crushed. wala!!! perfecto!

Love this recipe. lovely flavor with a bit of sweetness to it. i definitely added extra flour to get the right consistency and the ability to divide and roll into strands that could be braided. this was perfect for Rosh Hashanah with raisins added in on roll out. i sprinkled with poppy seeds after i brushed on the egg at the end. really dense, moist and super flavorful. loved it! and so did the family.

Buttermilk Strawberry Shortcake

NOM nom nom nom. super yummy. i used a 1/4 cup measuring cup to make the shapes. the consistency on this recipe makes it easy. filled the measuring cup. patted it flat and shook it out. plopped onto baking sheet. brushed with half and half and threw on a bunch of regular sugar. perfect. made for 30 people. everyone loved them! super flaky. not too sweet but just right. the strawberry juices soaked in a little and OMG good!! thank you!

Caribbean Sweet Potato Salad

This was a really nice salad with a twist for my Jamaican dinner for 50. Very interesting combination of sweet potatoes, corn, cucumbers, etc. the funny thing is that some people were turning their nose up at first but when they tried it they loved it and went back for seconds. One of the keys to this is to make sure you don't over cook the vegetables. make sure to pull the sweet potatoes and potatoes off the burner as soon as you stick a fork in them and it slides out easily. this was even better the second day with all of the juices mixing together. very interesting and fun and enjoyed by all. thank you!

Gefilte Fish

The Gefilte Fish in a jar at the store are repulsive... this is not and well worth the effort. I made this today for Rosh Hashanah. the basic recipe is solid. You can revise the fishes however you want. i used primarily salmon and the flavor was lovely. I added broth cubes to it for a bit more flavor and more salt because it was lacking a bit. loved the texture and flavor. I also added in quite a bit more matzo meal to get the right consistency and omitted most of the water. everyone enjoyed it tremendously.

Easy Curried Cauliflower

The seasonings are right on but the consistency is right off. it was dry. the photo shows a liquid and um there wasn't one so I added plain yogurt for a low fat version. I think adding coconut milk would be a more flavorful version.
