Lime-Cilantro Vinaigrette

SO YUMMY! I will (from now on) make my own dressings. I made another vinaigrette last week from off this site, and my picky stomach agrees with my own fresh ingredients! I did add more brown sugar (to suit my taste)......i COULD ALMOST DRINK THIS! LOL!! (I love lime and cilantro A LOT!!)

Ginger Glazed Mahi Mahi

What a delis recipe! I did this on Mahi Mahi, and a few nights later on Salmon! I could put this sauce on ANYTHING! And my picky boyfriend (he's a cook!) LOVED IT! He wants to put this sauce on any meat in the future! Thanks for sharing!

Tomato Vodka Sauce

YUMMY! I LOVE this recipe. I did add more Vodka though and used galic butter, and some seasoning to the shrimp I added. Also, I went ahead and put the shredded Parm cheese in the sauce! This so much better the next day!! (or, in my case, after it was put in the freezer, and taken back out a couple days later)

Broccoli Fish Bake

This recipe was okay. I will try it again - but next time I will not cook my fresh broccoli 1st. I will put it in the dish raw - since I don't care for over cooked broccoli. I added a lot of fresh lemon juice after putting it on my plate to cute thru the very fishy (cod) and broccoli taste. (I love lemon)

Cabbage Goulash

Great recipe!! I used Jimmy Dean Italian Sausage (because that's what was in the freezer). And I did season the ground beef with 1 tesp. of the "Taco Seasoning I" found on this site. Everything else - to the T!! I will keep this in the recipe book! (oh - I knew it would be too much for my 2-person household, so I halfed the recipe)

Pico de Gallo Chicken Quesadillas

I took a look at this recipe and said, WOW! That's just about how I make mine! I love Pico de Gallo - and it gives the Quesadilla that extra KICK!! I DO make sure I season my chicken how I like it, (in this case, Cumin, Galic powder, and a bit of Emeril Essence Seasoning).

Steak House Au Gratin Potatoes

Great recipe! I actually forgot the flour (which, of course, makes it thick) - so my dish was a little loose - but still good! I will use flour next time! Also, what I did was: salt pepper and paprika the potatoes - and did layers of potatoes, sauce and then cheese (to be sure all was even). Also, when I took the tin foil off, I sprinkled Italian Bread Crumbs on top and let it cook uncovered for another 20 minutes. AWESOME! It's going into our menu rotation for sure!

Open Face Mozzarella Sandwich

I LOVE this combination....! But of course, you have to work with what you have. I only had the garlic Texas Toast (thats in the frozen food area) - so this is a MUST from now on - you MUST try it with the garlic Texas Toast guys!! Oh, and make sure you toast it in the oven 1st, then flip it over to put the fresh tomato (I sprinkled basil on the tomato) and mozzarella cheese on it - then back in the oven so it can melt good. I loved the drizzle of balsamic dressing to top it off! THANKS FOR MAKING MY MIDNIGHT SNACK A HIT!!

Spicy Slow Cooker Black Bean Soup

This was OK. I thought by soaking the beans overnight would make them softer by the time the cooking (crock pot) was over. NOT! I see why some put this in the blender - which I don't have. I think that would have solved the problem! Decent taste tho.

Turkey and Yam Spicy Tacos

This was different and YUMMY! Ok, you know you have to substitute sometimes - I only had 2 jalpeno peppers, so I put a little caynne pepper in there - and had no idea where to get tomatillo salsa (but I had all the other ingredients at the house). I bought FOR $.50 a can of Red Gold that had the tomatoes and green chilles in it! Worked fine for me! Oh - and my yam was really left over sweet potatoes we cooked for Sunday's dinner....so mine was a little sweeter! LOVED IT! I think I will eat the leftovers from it again tonight!
