Coconut Cream Pie IV

This pie was awesome. For those who had trouble with it setting up, you MUST bring cream pies to a full bubbling boil. This one said for 1 minute and, after adding yolks, cook 30 seconds longer. My office loved it. My family will also love it at the next get-together!

Baked Ziti III

This was WONDERFUL. Even my picky 12 year old liked it. The only thing I did different was use all mozzarella cheese instead of a mixture of that and provolone.

Old Fashioned Chicken Pot Pie

This was really good. I added a little more milk because it seemed a bit dry. Also used refrigerated crusts. Was even better the next day for leftovers.

Holiday Pepper Cheese Dip

I left out the pimento because I don't care for them.....this was really good. It gets a little firm when refrigerated but is fine if stirred before using. Loved it.

Carne Con Chilies

This was really good! Slightly warm but that's how we like 'em. I may have used the wrong dried green chilis....the recipe said "green sauce" but when it all went in the blender, it turned a light red color. One tomato with all the tomatillos was not the cause of the color change, I don't think. Must have been the peppers. This would be good wrapped in flour tortillas or served over white rice. Kids dipped thier chips in the sauce.

Italian Breaded Pork Chops

This was really good! The breading tasted alot like the one we use on parmesan chicken. Way too much breading was left over so I will cut it in half next time. I made 9 pork cutlets and even double dipped them and still had about half the breading left over.

Piggy Pudding Dessert Cake

Bread Pudding II

This is a great recipe. I don't think I have ever had bread pudding with "just bread". I have always had it made with leftover doughnuts, cake, cinnamon rolls etc. Freeze those leftover bread products and when you have enough, make this! I made it with cinnamon rolls and it was excellent. Because of the sugar on the cinnamon rolls, I cut it down by half and didn't add additional cinnamon. I am feeding a crowd this weekend and will surely have doughnuts from Saturtday leftover, therefore Sunday morning we will have this bread pudding! Once a freind of mine had some lemon cake left and used it (minus the icing) along with doughnuts and it was delicous.

Microwave Oven Peanut Brittle

I made this in two batches yesterday. One batch was a pale color and not as crispy as the second. I made one the the morning and one in the afternoon. I think humidity was a factor, but both batches tasted great. I lowered the cooking time to 4 minutes plus 3 minutes for 1100 watt oven. Also since my peanuts were already roasted, I did not add them till halfway through cooking.

Best Barbequed Burgers

I had no complaints from anyone at my table after trying these. They were great. Although they have alot of traditional meatloaf ingredients, they do not taste like meatloaf at all after grilling. To simplify, it may have feathers, webbed feet and a bill, but if it dosen't quack, it's not a duck.

Pear Coffee Cake

This is an extremely moist and delicous cake. I left out the dates, I don't like them. I considered adding a sweet glaze on top but decided that it would detract from the wonderful pear taste. A great way to use up the pears off your tree!

Chili Potato Burritos

My family and I really liked this. I did not mash the potatoes but after stirring in all the ingredients, they were pretty mashed up anyway. I added some cooked shredded chicken, but not much. I will add more chicken next time. I also used the whole can of enchilada sauce (a little in the filling and the rest on top).

Absolute Mexican Cornbread

I have made this several times and people love it. I use 1/2 c. sugar and substitute jalapinos for chilis. I also pour in about 2 Tbsp juice from the jalapinos. Yum..........
