Coconut Cream Pie IV

This pie was awesome. For those who had trouble with it setting up, you MUST bring cream pies to a full bubbling boil. This one said for 1 minute and, after adding yolks, cook 30 seconds longer. My office loved it. My family will also love it at the next get-together!

Campbell's® Easy Chicken and Cheese Enchiladas

I have made this numerous times and I like to pour a can of red enchilada sauce on top before baking. They are um um good!

Hopi Corn Stew

This makes enough to feed a small army. I served it to about 20 people (with sandwiches). They seemed to like it and some gave lots of compliments. I thought it was kind of plain. After I made it and tasted, I added about 2 Tbsp. cumin and extra chili powder, salt and pepper. This perked it up a bit.

Cube Steak Parmesan

This was good but a little bland. I will use spaghetti sauce instead of plain tomato sauce next time. Also, it seemed like something was missing.....should be recommended to be served with spaghetti, such as with chicken or veal parmesan.

Maple Shortbread Cookies

I didn't have real maple syrup but used pancake syrup. Cookies weren't very sweet so I put a brown sugar icing on them. They were better with the icing. I may try making these with karo syrup and using other flavorings like lemon or coconut, all with icicng.

Rich Chocolate Truffle Pie

This was good, perfect texture for a truffle pie, but needed to be a little sweeter. It had a real semi-sweet chocolate taste. If I make it again, I'd have to use the milk chocolate chips instead. This might be perfect using the mint chocolate chips.....the possibilities are endless.

Easy Chicken Alfredo

I scaled this up X5 to feed 20 people....After 3 lbs pasta, there was enough to feed an army. I didn't add the remining pasta because it would have been way too much and I don't think there was enough sauce (5 jars) to cover that much pasta. I got rave revews and people ate a bunch, but there was still alot left over. With a salad and side dish the original recipe easily would feed 6-8, not 4.

Rainbow Pasta Salad I

This was good, and attractive, but just nothing special about it. I wish it would specify a brand name of Italian dressing since those who tried it and really liked it may have used a bottled dressing that was tastier than the Wishbone brand that I used. I use that brand on green salads so that is why I bought it for this recipe.

Sour Cream Streusel Coffee Cake

This would probably be better as a pound cake, leaving out the streusel. I used almost twice as much brown sugar and cinnamon as it called for and still didn't get much of a streusel taste. It was good, just not a real streusel kind of cake.

Am I the only one here to notice that the instructions said to bake in three 6X3 loaf pans? After filling four 6X3 pans and still having batter left, I should have realized this was very wrong and baked in 3 regular size loaf pans. This was a fiasco....it cooked out of the pans and spilled into the oven...what a mess. I pride myself on being a good cook and have gone over this several times and I did follow instructions exactly. I notice others have chosen to use bundt pans... maybe this would have worked better. More than half of this had to be thrown away, although what little I saved had a good taste.

White Chocolate Cream Cake

My friend found this recipe and asked me to make it for her birthday. As I was making it, I was hoping it was worth the extra trouble. The icing is what really makes this cake. The cake was very good and the icing is even better (using the almond extract). I will make it again.

Chili Soup

I thought this was a little bland. It seemed more of a tomato soup with meat and beans. Being in the heart of Tex-Mex land, I have a hard time calling it "chili". After tasting the original recipe, I pretty much tripled the chili powder and poured in almost a cup full of juice from some canned jalapenos, which seemed to cut the overpowering tomato soup taste. With the additions I give it 4 stars, but will still have to call it Tomato-Potato Soup instead.
