Inside-Out Manicotti

Its a good recipe, however I think a 14 ounce can of crushed tomatoes would have been lots. I didn't have ziti on hand so I used rotini and it worked fine. I also skipped the nutmeg and added some extra garlic, basil and pepper to the cheese mixture along with tsome fresh grated parmesan cheese. I also topped the dish with more mozerella and parmesan.

Focaccia Bread

I just made this bread. It just came out of the oven and I had some. It is awesome bread. It cooked a lot longer than 15 minutes in my oven and I'm still not so sure it was completely cooked. Maybe I didn't thin it out enough. As I was reading the reviews I noticed everybody complained about it rising so I decided to try something different. I followed the recipe as is and used the oven as my warm place. I put the bread in a metal bowl, used the damp towel, and just turned my oven on for a bit to create that warm environment. I had it at less than 200 degrees for less than 5 minutes. It was just enough to warm the oven and create that moist environment. The bread rose beautifully. Took a little longer than 20 minutes, but it worked great. I'll let you know how it tastes in a while! Going to make the Creamy Garlic Chicken from this site to go with it. BTW...I topped my bread with olive oil, garlic salt, italian seasoning, parmesan and mozerella cheeses.

Taco Seasoning I

Awesome recipe!! I accidentally bought the hot spicy taco seasoning mix. It's too hot for my 2 year old so I needed something to replace it. This did the trick! I don't think I'll be buying taco seasoning mix anymore. This is just too easy and I love that I can control the heat and the salt. Thanks a bunch!!!

Chicken Tortilla Soup III

This is an awesome recipe. To save time I browned the chicken in the butter, onion, and garlic. Because I used milk I increased the amount of butter and flour slightly (5 tbsp margarine instead of 3) to make up for the thickness of the cream. I used cream of mushroom soup because I had no chicken, and skipped the cilantro (had none). I added a little more salsa than called for as well. I usually like my soups a little thicker, but once I had it in a bowl with all the crackers and cheese, I didn't miss the thickness at all. It was a very very good soup. I'd recommend this to anyone!

Hash Brown Casserole II

I make this all the time, especially when I'm by myself. It's my own version of "fast food". I thaw the hash browns in the microwave for a couple minutes first. Then I add the cream soup (usually mushroom). I use garlic powder and often onion powder instead of real onion, mostly because I'm lazy. I top it with bread crumbs and cheese instead of cornflakes. I also up the cooking temperature to 400. I mix the entire thing right in the casserole dish to save pots! Easy and delicious! Excellent recipe!

Greek Pasta with Tomatoes and White Beans

This was so easy and so good!! I've made this a number of times now. I add lots of fresh garlic and fresh basil. I also add salt and pepper, a touch of sugar and a splash of worcestershire sauce. It's a very good, quick meal on a week night!

Mocha Coffee

Pretty good. I love coffee and I love flavoured coffee even more. I did use the full 1 tablespoon of cocoa and loved it. Instead of milk though I used my french vanilla flavoured dairy creamer. I also added extra sugar. I tend to like my coffee a little sweeter. All in all pretty good!

Taco Lasagna

I made this the other night. I had about a pound of leftover taco meat, so I decided to make this. I didn't measure a thing, just kind of eyeballed it. Layered it the way it said, skipped the green onion because I didn't have any and didn't add the spice to the ground beef. I also added a thin layer of cream cheese on top of the tortillas. Tasted great!

Easy Cheesy Chicken I

I threw this in the slow cooker this morning. Smelled great all day. I made the recipe exactly with the exception of some extra garlic. I also coated the chicken in Italian Seasoning before throwing it in the pot. Easy as pumpkin pie and delicious. Good combo!

White Cheese Chicken Lasagna

This is a heck of a lot of work but boy is it good!! I fudged up on the layering a bit, but it didn't seem to affect things at all. Oh yeah, I also added an extra clove of garlic! But other than the garlic, I didn't change a thing. The lasagne tastes awesome. When I'm cooking on the weekend I'll definately keep this one in mind!!

Mama Bear's Porridge

Nice recipe. I tried it this morning and even my 2 year old liked it. I omitted the raisins because I didn't have any, but I may get some. I also used quick oats because I didn't have rolled oats, worked fine and cooked quicker! A little extra cinnamon helps too! Good recipe!

Chocolate Squares II

Tastes pretty good. It certainly isn't hard to make. I would say make it in a very small pan, otherwise its just a thin layer on the bottom. Also, it never really firmed up. Kind of like fudge that didn't quite work. It needs to be eaten with a spoon, not quite finger food. I skipped the nuts, don't like nuts. My toddler loves it as well. Kid friendly and easy, can't beat it!

Goulash Supreme

Well, if you add kidney beans, its chili macaroni. It's a good recipe though. I didn't really fiddle with the spices too much except to use fresh garlic instead of garlic powder. I did as some of the others and used 2 cans diced tomatoes. I also used a can of tomato paste. Because I cooked the mac in with the meat I ended up adding about a cup of water to get the mac to cook properly. Nice idea!!

Simple Beef Flavored Gravy

Good recipe, but like the others I changed the way I made it, not the ingredients I used. I sauteed the onion in the butter first, then I added the flour to make a roux. I browned the roux to give my gravy some color. Then I added the bouillion and the water. I used to 2 packets of beef boullion in mine, which I scaled for 2 people. Worked out well and tastes great!

Salsa Chicken Rice Casserole

Here's what I've done to make this recipe simpler. I put the chicken in the skillet with the onion and brown them both. I add the salsa and soups to the chicken and simmer till chicken is done. I make rice as normal. I mix the cheses right on the wax paper or parchment paper I shred it on. I layer as directed. Saves some pots!

Three Cheese Garlic Scalloped Potatoes

The flavour is fine but that is no where near enough cooking time nor is that a high enough temperature. I would say maybe 375 for an hour might make more sense. Anyway, it is a good recipe. I did use milk instead of cream though. Next time I will try cream.

Chicken Lasagna IV

I didn't care for this as much. It tasted fine, but I just found it way too gooey! It needs something to soak up some of that sauce. A few ideas that were mentioned were using some veggies like spinach, using one can of soup, or even using ground chicken instead of chopped. Anyway, good recipe, just needs some tweaking!

Layered Egg Noodle Bake

I've made this recipe a number of times now. I really like it. I don't really modify except to omit/change ingredients that I don't have on hand. The green onions often get omitted. I will usually add extra garlic and more seasoning to give it a little more flavour although its really good just as is. Awesome recipe! Lots of work but well worth it!
