Tater Tot Casserole III

Good recipe. I skipped the butter (it doesn't need all that extra fat). I didn't have any sour cream unfortunately although I know that would have been awesome. I used bread crumbs instead of corn flakes because I just like bread crumbs better and I reserved some of the cheese for the top. I also used cream of celery soup instead of chicken because that's what I had. I was also lazy and used onion powder instead of real onion only because I was making this for myself only. I still used one can of soup and enough tater tots for me only. Makes it a little more creamy. If I were making this recipe for 8 I'd probably use 2 or 3 cans of soup. I can see it being a little dry. Just a tip, microwave your tater tots for a few minutes to thaw them before putting them in the oven. It helps lower the cooking time. I also found I could cook this at 375 instead of 350 without a problem (at least in my oven).

Breaded Pork Chops

These were good. I really like the breading. My pork chops were a little thicker and I ended up throwing the them in the oven for a bit to finish the cooking process. Not a big deal, it was already on for the scalloped potatoes. I also cooked it on more like medium heat verses medium high. On my stove medium high would have burned the breading. Good recipe.

Home-Style Scalloped Potatoes

Well I personally love scalloped potatoes and I made this for hubby tonight. He's very picky and complained there is no flavour. I added 4 cloves of garlic. He doesn't like cheese so I can't do that. I won't do bacon because I don't like that. Not sure what one can do to scalloped potatoes to give them more flavour and still keep to a more or less traditional dish. So anyway 4 stars, only cause of my very very very picky hubby.

To Die For Blueberry Muffins

These muffins are delicious. I love the topping. I did use brown sugar instead of white like other reviewers. I only have large muffin tins, I don't make anything small. So filling them to the top meant I only had 8 muffins. I think I'd rather 3/4 fill them and get a few extra muffins. That and it keeps them from flowing over the top as much. Also I found I didn't have enough liquid. The batter looked more like dough. I ended up adding some extra milk to get a better consistency. The muffins came out great, but I think a little more than 1/3 milk is necessary (at least in the Canadian climate I'm in). Overall though great recipe!!

Brownie Pudding

This was absolutely delicious and perfect for my pregnant chocolate craving!! I have to say though that I tasted the batter and added more cocoa. One tablespoon cocoa just wasn't enough. I ended up with 3 tablespoons cocoa in the brownie batter and 2 in the brown sugar mixture. It came out very pudding like and was just delicious. The only other little change I made was to use butter instead of shortening because it's what I had. Awesome recipe!!

Warm Dijon Potato Salad

I really liked this recipe. I made it with 4 potatoes instead of 5 and used the same amount of dressing. It worked fine. I didn't have any onion so I put a tiny bit of onion powder in the dressing. The only other thing I did was add a little yellow mustard just for a little extra tang. Otherwise it was really good!

Chicken Potato Bake

This was awesome. I boiled the potatoes about 10 minutes and used raw chicken pieces. I also added some broccoli to the mix just to make a complete dinner. I used the Italian dressing mix recipe from this site like one other reviewer. This was really really good. Everybody in my picky house loved it!

Cajun-Spiced Popcorn

This was really good and addictive. I made this with microwave popcorn and used about half the recommended spice/butter mixture for it. I also used seasoning salt instead of regular salt. I baked it but only for about 7 or so minutes as I got concerned about burning it. One thing I did do was line a baking sheet with some parchment paper before I put the popcorn down. This made removal easy because I was able to just lift out the parchment paper and it made cleanup even easier (no greasy pans). Thanks for the recipe!

Chicken Pot Pie VIII

Well if it were me I'd give it 5 stars. I quite enjoyed this dish. My extremely picky husband did not even though he likes all the flavours in the dish separately. My daughter wouldn't even look at it. BTW, I cooked it like a giant stew. I just sort of dumped everything into one pot and cooked it up. I allowed the potatoes to cook that way and it worked for the most part. Saves a pot too! Good recipe unfortunately I won't be able to make it again because the crew is too picky. :(

Microwave Caramel Popcorn

This was awesome. I also used a bag of microwave popcorn and cut the caramel mix in half. It worked great. I found it didn't need as long in the microwave as the recipe stated, but that's not unusual, different microwaves mean different times/temperatures. Just keep an eye on it. I'll definitely be making this again! Thank you for the great recipe!

Garlic Twice-Baked Potatoes

These were awesome! My extremely picky husband even liked them. My picky 6 year old didn't like them though. It was likely the rosemary that she didn't like, but it's easy to fix. I'll be making these again, maybe even as just plain mashed potatoes. I did use sour cream in place of the buttermilk because I don't usually have buttermilk on hand. My husband complained there wasn't enough! Thanks!!

Oatmeal Chocolate Chip Cake

It's a good cake, very moist. I didn't have quite enough chocolate chips to go around but I did have some baking chocolate I melted and put on top instead. I actually don't find it sweet enough for me. I likely need to add more chocolate to it. I'm definately going to make it again with more chocolate! Thanks!!

Omelet in a Mug

This does work without the spray. I used an oversized coffee mug and 2 eggs. I added bologne and cheese to mine. I stirred it after the first minute, then again after the second minute and every 30 seconds or so until cooked. It took almost 2 minutes in my microwave. You end up with more like scrambled eggs, but the eggs won't stick this way.

The Best Meatloaf

I found this to be extremely bland. I modified the recipe for 1 pound of beef and although it was extremely moist it had no flavour. I typically add a lot of ketchup and worcestershire sauce along with garlic and onion making a very flavourful meatloaf. There was no where near enough steak sauce in this to give it flavour. Because I modified it for 1 pound, the recipe only called for 3 tbsps of steak sauce. I should have kept it at 1/3 cup and added garlic. That said it was extremely moist which is why I gave it 3 stars. I will make this again using a lot more steak sauce and some garlic.

Steak Sauce

I just made this. It's pretty good. I used Heinz ketchup and found I had to cut the sweetness a little with some extra vinegar. I had some hot and spicy ketchup on hand and used that instead of hot sauce (I just substituted some of the regular ketchup.) After that I added some extra Worcestershire sauce and a little liquid smoke. I'm planning to use it with a meatloaf recipe I found on this site for tonight's dinner.

Morning Glory Muffins I

Good recipe. I changed a few things though, mostly due to likes/dislikes and what I had on hand. Like others I took out the apple butter and oil and put in applesauce. I left out the raisins because my husband doesn't like them. I put the wheat germ in with the flour, left out the nuts (again nobody likes them) and topped the muffins with brown sugar. Good recipe! Thank you!!

Hearty Chicken Strata

This one wasn't all that great. My husband hated it. I found it dry, but the flavour was alright and my daughter seemed to like it. Not sure how to fix this one up but I probably won't make it again.

Beef Stew VI

Awesome recipe! Like others I used beef broth instead of the cubes. I also used red wine instead of water. I also like my stew thicker and used a lot more corn starch than called for. I mixed the corn starch right into the beef broth, again instead of adding water. I found it a little bland so I added some sage and a bunch of extra salt and pepper. Thanks for a great recipe!
