Panko Crusted Mashed Potato Cakes

This is the second time I've tried these. I figured I should give the recipe another chance and make some modifications and I think I'm going to make these yet again and modify them further. This time I used only 1 egg in the potatoes and did not dredge the potato pancakes in the flour and egg. Simply rolling them in panko made them slightly easier to work with. Next time I make these I'm going to skip the egg all together! Unless you're making dry mashed potatoes (no milk and butter) there really is no need for the additional moisture from the egg. Just add the flavourings, form and roll in the panko. It doesn't need anything else.

Chicken and Herbs in White Wine

Pretty good recipe. I just did this with chicken breasts in a deep frying pan on the stove. It works well. I thickened the sauce after and made some gravy for the mashed potatoes. It worked out great!

Whipped Cream

Perfectly good whipped cream. An easy way to get your whipped cream to stay fluffy is to bloom 1 tsp of unflavoured gelatin in 1tbsp of water. Then just add that to your whipped cream when you add the sugar. It will stay nice and fluffy for days! No more making whipped cream at the last possible second.

Marinated Chuck Roast

Slow-Cooked Chili

It's a perfectly good basic chili recipe. I make my chili in a similar fashion. I don't make quite this much though. I use only 1 pound of ground beef and 1 can of kidney beans that are drained and rinsed. This time I used diced tomatoes that I pureed with my hand blender. My husband doesn't like tomato chunks. I also used a can of tomato paste. I used an entire head of garlic as well. I fried the ground beef, onions and garlic in the frying pan and dumped them into the slow cooker with the other stuff. I just sort of dump chili powder in, I don't measure. I've probably used 3 or 4T of it though. And I didn't use green pepper. It makes for tasty chili!!

Sweet and Sour Chicken II

Very easy and very good. Because I didn't have green pepper and water chestnuts around I used carrots with the pineapple and chicken. I tossed the chicken in some flour seasoned with salt and pepper and threw that in the pot first to brown. Then I pulled it out and made the sauce using only 1/2 cup of brown sugar and a couple squirts of ketchup. I thickened it with flour and water because I'm out of cornstarch at the moment. It was a great dinner. Very easy to make and will make again!

Apple Squares

We really liked these. I used All Spice in them instead of cinnamon, only because I didn't have cinnamon in the cupboard. They were really nice with the all spice. I also added apple juice to the batter like some others. Once I mixed it I could have kneaded it and rolled it out with a rolling pin, it was really dry. I added some apple juice just to moisten it up some and make it more batter like and less dough like. For the topping I used brown sugar instead of white sugar and mixed it with some all spice. They came out awesome! Next time I'll probably make them with cinnamon though. Great recipe!

Herbed Dumplings

Awesome! Did them in the slow cooker. They took about 45 minutes to an hour on low. I added garlic and onion powder and they needed a little more milk than written, but otherwise awesome! I used them with a beef stew recipe also from this site!

Stuffed Pork Chops

Great recipe. I followed the stuffing recipe as directed and we really liked it. I skipped browning the meat on the stove though and just threw them in the oven. I hate having left over onion so I cut up the little bit for the stuffing and then put the rest in with the chops and broth. I also added some garlic. I used a brown gravy mix with the drippings instead of just adding cornstarch and water. Excellent recipe.

Chocolate Cookie Cheesecake

I quite like this cheesecake. It's a lot of work but I think it's worth it. It's not overly sweet either, which is nice. I'm not crazy about the sour cream layer on the top of the cake. I think I would skip that next time and just put the ganache on top. Otherwise good cake and probably will make again.

Alfredo Sauce

Good, easy alfredo recipe. I added the minced garlic right into the melted butter in the first step. If you're not a huge garlic fan this is an easy way to cook the garlic down some. Using fresh grated parmesan definitely makes the difference and helps with the thickening. That Kraft stuff just won't do it! Awesome recipe!

Stuffed Pork Chops III

Great recipe! I changed this slightly. I didn't put fresh onion in the stuffing as I wanted it to cook down more than it would have, so I just put it in the frying pan with the pork. Otherwise I made the stuffing as directed. I turned this into a 1 pot dish by adding chopped up potatoes to the pan and adding a bunch of extra beef broth. Then I threw the entire thing in the oven at about 375 to finish cooking. The pork chops finished first so I took those out to rest while the potatoes finished cooking at about 400. Once the potatoes were done, I added a gravy mix to the broth and made gravy on the stove. It ended up being a really good dinner! BTW, it helps if the chops are a little frozen. They are easier to stuff/cut and less likely to rip apart.

Chicken Enchiladas I

The recipe is good. I had to change it a bit based on what I had in the house. I used salsa in place of the tomato sauce and water. I didn't have taco sauce either so I just spooned some of the sauce over the top and covered with cheese. I eyeballed all of the ingredients, didn't measure anything. It came out really good. I changed how I put this together a little too. I put the onion, garlic and spices in with the chicken while it was browning. Then I added the salsa and the rest of the ingredients. I let that simmer for a bit and then stuck it in the oven. I didn't want the chicken to have no flavour. I served with some taco chips for dipping in the sauce and a salad. Good idea!

Slow Cooker Beef Stew I
