Poutine

This is probably more appropriately named "Cheese Fries". Poutine is actually made with cheese curds and beef gravy as others have stated. That said, in a pinch, it is a perfectly acceptable substitute and one I can make at home!

Beef Stroganoff II

This was very good! I cheat and make my stroganoff with ground beef for a cheap, quick meal. The only thing I did differently was add some garlic and some worcestershire sauce and serve it over rotini instead of egg noodles. Great, easy recipe!

Caesar Salad Supreme

I have to admit I used this recipe solely for the sauce! I didn't make my own croutons. The sauce is to die for! I didn't use the anchovies but made the sauce as written and tasted it pretty good. I loved the garlic flavour but it needed a little tang. I added some red wine vinegar, thinned it out just slightly with some milk and let it sit for a couple hours. Amazing! I love more of a garlic caesar salad and this fits the bill beautifully! I will be making my caesar dressing from now on! BTW, fresh parm is the only way to go. That processed stuff just doesn't do it! Buy a brick, keep it in the freezer in a ziplock bag and it'll last for months. Just pull it out and grate it when you need it.

Mom's Brown Gravy

Really good gravy recipe. I did not make this vegetarian. I used beef boullion instead. I had the packets of powder and used 4 of them in the gravy. I also added a few dashes of worchestershire sauce to give it a little kick. Very good recipe!

Really good! I changed the spice mix a little just for my own taste. Basically it's a really good, easy gingerbread men recipe. Just change the spice ratios to suit your fancy!

Herb Roasted Pork Loin and Potatoes

We made this. It's really good and fairly easy to make. We found it to be dry, basically it needs gravy! Next time I make it I will be making gravy to go with it, but beyond that I will definitely make it again!

Pasta with Fresh Tomatoes and Corn

Excellent recipe! I made this with balsamic like many other reviewers and added a bunch more fresh parmesan. Because it's November now and not the middle of the summer, I actually threw the pasta and sauce mixture back on medium heat for about 5 minutes. Warming the tomatoes and corn through really helped the flavour of the dish. It also allowed the pasta to absorb the flavours a little more. Will definitely make again!

Ranch Dressing II

Great recipe. I didn't have any sour cream but I had leftover buttermilk I was looking to use up. This did the trick. I cut the recipe in half and followed the spice measurements. I added a bunch of white vinegar to it because I wanted it to be more tangy than it was, but other than that it was great. I will make this again.

Spinach Frittata

I just made this. It's definitely easy. I didn't have any chicken or peppers so I left them out. I sauteed onions and garlic (I used 4 cloves) in an oven safe skillet. Once they were cooled I took them off the heat and got the rest of the ingredients together. Like another reviewer I wanted to use the whole pack of spinach so I added an extra egg and some milk. I added some basil to the mix as well. I dumped the onions and garlic into the bowl and mixed them in (they had cooled enough at this point). I cooked it half in the oven and half on the stove. I think next time I'll just use the oven and I'll add a lot more cheese, likely cheddar. I think it needs the extra flavour. It's really good as it is, just needs a little extra flavour for my liking. Will make again!

Garlic Pasta

Super easy and very good. Makes a quick lunch! I used dried herbs and upped the garlic. I didn't measure anything, just sort of dumped it in and mix. Definitely use fresh parmesan!

Chicken Cordon Bleu II

Tried this tonight. My husband doesn't like cream sauces so I had no choice but to cook the chicken separate from the sauce. I breaded the chicken in and panko and used chicken broth instead of wine only because I didn't have any wine on hand. I used a combination of heavy cream and milk for the sauce. It would be fine with only milk too. Great recipe!

Best Steak Marinade in Existence

Great marinade. I didn't have lemon juice so I threw in some red wine vinegar. Came out very good! Only marinated the meat for a couple hours, but still excellent!

Chicken Breasts with Balsamic Vinegar and Garlic

This was really good just as is. Most of my family don't like mushrooms so I just left them out and it was fine. You could easily increase the ratio of balsamic vinegar to broth as it wasn't overpowering by any means. When I make it again I'll probably go closer to half and half and see what happens. Overall it's a really good weeknight dish!!

Sherry Apple Pork Chops

These were very good! I didn't have any sherry so I used red wine instead, but otherwise I changed nothing. I think next time I want to try them with sherry and do them in the slow cooker like some of the other reviewers have done. It is a very good recipe as written!!

Panko Crusted Mashed Potato Cakes

This is the second time I've tried these. I figured I should give the recipe another chance and make some modifications and I think I'm going to make these yet again and modify them further. This time I used only 1 egg in the potatoes and did not dredge the potato pancakes in the flour and egg. Simply rolling them in panko made them slightly easier to work with. Next time I make these I'm going to skip the egg all together! Unless you're making dry mashed potatoes (no milk and butter) there really is no need for the additional moisture from the egg. Just add the flavourings, form and roll in the panko. It doesn't need anything else.

Chicken and Herbs in White Wine

Pretty good recipe. I just did this with chicken breasts in a deep frying pan on the stove. It works well. I thickened the sauce after and made some gravy for the mashed potatoes. It worked out great!

Whipped Cream

Perfectly good whipped cream. An easy way to get your whipped cream to stay fluffy is to bloom 1 tsp of unflavoured gelatin in 1tbsp of water. Then just add that to your whipped cream when you add the sugar. It will stay nice and fluffy for days! No more making whipped cream at the last possible second.
