Cincinnati-Style Chili

This was a good base for Cincinnati style chili. All in all I liked it. I made a few tweaks. First I left out the beans. Cinti chili doesn't have beans in it. If you want them you cook them on the side and add them at service,otherwise they get to soggy. I also added a bay leaf while cooking. This is a trick that my brother told me from his experience making Cinti chili in the past. It adds a lot to the chili. I did not have allspice so I used a pew dashes of nutmeg. I need allspice for next time. Other then that next time I will use 1 1/2 tbs coco instead of 2. Like I said, great base for a recipe. I can't wait to try it again.

Turkish Fish Stew

This dish was superb. I didn't have any sumac so I googled substitutions. A little lemon pepper and paprika seemed to work. I used a cup of white wine and 5 cups of water.also some sodium free chicken boulion powder. I made this more of a soup base then it seems to be with the cous cous. I eyeballed some extra seasoning to make up for the extra liquid. I used frozen tilapia and mussels. I made these mods because I am on a low carb diet. All in all this is a great base recipe. I do think the recomended red pepper is too much. It was perfect for me but I added alot more water. Good luck making this your own. It worked great for me.

Beef Stroganoff III

The flavor of this dish was spot on. I only gave it 4 stars because I had to use almost 2 1/2 times the beef broth to keep it from running dry while simmering. I will definatly use this recipe as a starting point again.

Traditional Osso Buco

I think this is a wonderful base to start with for Osso Buco. It was delicious but not as good as some I have had. Feel free to play with the ingredients if you have the urge. I think next time I will use red wine and less tomato.

Fish Chowder

This is a wonderful recipe. I used 2 whole tilapia instead of cod. I filleted them and used the bones to make fish stock intead of using chicken stock. I didnt have mushrooms so I added corn. other than that I stuck to the recipe and it was wonderful. I served it with corn bread. mmm mmm

Baked Parmesan Perch

I used this recipe as a base for the ingrediants I had. I substituted crushed wheat saltine crackers for the bread crumbs and a basic Italian seasoning for the basil. Wish I had the basil but the Italian worked great. I also added some onion and garlic powder. Tastes great. Also alterd the cook time and temp to 20min at 450 like some recomended. This turned out perfect. Cheers

Beer Brats

These were amazing. I used newcastle brown ales and added an orange bell pepper in with the onions. I also used minced garlic instead of powder. I boiled the brats for about 30 min and this gave the beer more time to cook into the brats and reduce. I grilled the brats on low and kept reducing the beer on high until I had a wonderful chuttney. Wonderful dish. I will definitly do these again.

Deviled Eggs

These were the best Deviled Eggs I have ever had. I didn't have white vinegar so I used apple cider vin. instead. Wonderful flavor.
