Buffalo Chicken Sandwiches

I used Wingman buffalo wing sauce instead of the hot sauces. I completely forgot about the paprika so I'll have to try that next time. Add Ranch dressing on the bun and it tastes just like the Buffalo Ranch Chicken Sandwich at Chili's. I also add a little extra buffalo sauce to the bun. If the sauce gets on the pan while cooking, it will smell really bad, but tastes wonderful.

Fruity Tart

I made this the day before I took it to a dinner party. The crust was soggy from the pudding. I also didn't like the cooked pudding. (I'm used to instant.) I would only go with either blueberries or raspberries, not both. There wasn't much room with the other fruits so might as well not have to buy both to only put a few pieces on. 1 c of peaches was 1 peach. 1 c kiwi slices was 2 kiwis. There is nothing wrong with this recipe, just not my preference. I was really excited about making it and both my friends and I were disappointed with it.

Texas Ranch Chicken

Tastes like the inside of a chicken enchilada. My husband and I both loved it. For two people, this is how I made it: sprayed 8x8 with Pam (no oil), 2 chicken breast halves, mixed 1/2 c lite ranch w 1/4 c lite sour cream, handful of mozzarella and cheddar on top. Used suggested cooking time with no problem. This is a great Atkins or South Beach meal with very little carbs/sugar.

Cherry Chicken Salad

Wonderful treat for lunch. I only use 2 chicken breasts and double the apples. I use whatever milk I have in the fridge and omit the pecans.

Simmering Chicken Strawberry Kabobs

Served this for company and just got an ok response. Probably wouldn't make it again. Everyone liked the pineapple, the strawberries got mixed reviews (either love them or hate them) and the chicken was too bland even with doubling the spices. Probably won't make again.

Mom's Italian Beef Barley Soup

Lemon-Orange Orange Roughy

Great, healthy, easy. I used 2 Tablespoons orange juice and 1 Tablespoon lemon juice instead of the fresh orange and lemon. Not a lot of sauce, but enough for good flavor. Dinner was ready in literally 10 minutes!

Caramel Apple Pork Chops

Bacon Chicken II

My husband likes this more than I do. I microwaved the bacon for 2.5 min and only cooked the chicken for 35 minutes based on previous suggestions. It came out cooked properly, just nothing I would especially rave about.

Parmesan Chicken I

I used frozen chicken breasts and they came out REALLY dry. The rice had wonderful flavor, but it had a hard layer on top. Definitely wouldn't make this one again.

Marie's Easy Slow Cooker Pot Roast

As recommended, I substituted the water with a can of beef broth. I also added 1 T worchestershire sauce, 1/2 t Montreal steak seasoning, and 3 cloves crushed garlic to the liquid. I seasoned the meat with Montreal steak seasoning before browning. Flavor and texture of the meat was great and perfectly cooked after 9 hours on low. However, the potatoes and carrots were still completely hard. I had to boil them for at least 20 minutes before we could eat them. I would recommend either partially cooking the vegetables in the microwave before adding them, or setting up the meal and cooking it on low overnight and then for the recommended 8-10 hours.

Chicken Scampi I

I marinated it all day and then put the chicken on the George Foreman. Instead of dirtying a pot, I microwaved the sauce for 3 minutes. I served it over quinoa and poured the sauce over both. It was edible, but the taste was too strong and overpowering. Not even pleasant enough to modify and try again.

Barley Bake

I love this recipe, but no one else that I have made it for does. However, I am giving the rating. So there. I think this is a healthy, unique substitute for a starch side dish that is full of flavor and texture. I'll make it whenever my husband isn't home.

Slightly Spicy Chocolate Chip Cookies

The title is right to call them slightly spicy. I didn't have any cloves, but still didn't think they were any better or worse without the spices. Being in CO, they turned out a little flat so make sure you adjust for high altitude. They were good, but I'll just make the back of the bag recipe next time.

Baked Salmon II

Just a few spices sounds like no big deal, but this really was the best salmon I've ever made. I made it as is and wouldn't change a thing. After marinating the salmon for 1 hour, I just covered the pan with tin foil and baked to make it easier. I made 3 fillets with the amount of marinade and had plenty leftover, but still wouldn't adjust anything next time.

Twice Baked Sweet Potatoes

I omitted the oil and foil step. I also did not add walnuts. I baked at 425 for 1 hour 15 min and still had to microwave them for about 5 minutes to get them soft enough. My husband and I really like this recipe and I will make it again.

Buffalo Style Chicken Pizza

Good change from pizza. The times aren't right on the recipe. It takes about 10 min to prepare and 10 minutes to cook. Very quick dinner with little effort. Also, I substituted Ranch for Bleu Cheese (only used a few tablespoons as opposed to the whole bottle it called for).
