Marie's Easy Slow Cooker Pot Roast

As recommended, I substituted the water with a can of beef broth. I also added 1 T worchestershire sauce, 1/2 t Montreal steak seasoning, and 3 cloves crushed garlic to the liquid. I seasoned the meat with Montreal steak seasoning before browning. Flavor and texture of the meat was great and perfectly cooked after 9 hours on low. However, the potatoes and carrots were still completely hard. I had to boil them for at least 20 minutes before we could eat them. I would recommend either partially cooking the vegetables in the microwave before adding them, or setting up the meal and cooking it on low overnight and then for the recommended 8-10 hours.

Chicken Scampi I

I marinated it all day and then put the chicken on the George Foreman. Instead of dirtying a pot, I microwaved the sauce for 3 minutes. I served it over quinoa and poured the sauce over both. It was edible, but the taste was too strong and overpowering. Not even pleasant enough to modify and try again.

Tangy Shrimp and Scallops

With shrimp sized 26-30, I use 12 shrimp per person. I only did shrimp since others didn't have luck with the scallops. The recipe is easy. It was a light and enjoyable taste. The grill time was definitely too long. If they are pink, they are done! This would be a good surf and turf recipe as it's not "to die for" on it's own, but good.

Delicious Grilled Hamburgers

I used 1/2 Tablespoon of liquid smoke, as the other reviews suggested. And I just mixed all of the ingredients together at one time. I would say to only cook them for 4 minutes per side. Also, try to make the patties more flat. Mine were a bit too rounded which made them too small for the bun. But the flavor... definitely a keeper! Because we are trying to eat less, I made 4 patties instead of 3. Now I have 2 burgers in the freezer for next time.

Simple Grilled Lamb Chops

Wow! I used this with lamb chops and can't wait to try it with steak. Simple and absolutely delicious! We grilled for 4 minutes per side for a perfect medium.

Salmon with Lemon and Dill

For 2 salmon fillets, I reduced the butter to only 2 Tablespoons, the lemon juice to 3 Tablespoons, and the dill weed to 1/2 Tablespoon. Very strong flavor and great healthy meal.

Oven Brown Rice

For the record, this makes six 1/2 c servings. I took other's suggestions and used low sodium broths, unless I used bouillon cubes. I also used garlic powder instead of garlic salt and only used 1/2 teaspoon of seasoned salt. I turned up the oven to 375 and cooked for 75 minutes. You can also switch the beef and chicken broth amounts if you have more of one than the other. Good healthy and hearty recipe, even if you don't like brown rice.

Lemon-Orange Orange Roughy

Great, healthy, easy. I used 2 Tablespoons orange juice and 1 Tablespoon lemon juice instead of the fresh orange and lemon. Not a lot of sauce, but enough for good flavor. Dinner was ready in literally 10 minutes!

Salmon Fillets with Creamy Dill

I love salmon and make it at least once a week. Per the suggestions, I used nonfat plain yogurt instead of mayo and about half of the mustard. It was just SO much sauce. Even after scraping it off, I still didn't like the flavor of the fish.

Barley Bake

I love this recipe, but no one else that I have made it for does. However, I am giving the rating. So there. I think this is a healthy, unique substitute for a starch side dish that is full of flavor and texture. I'll make it whenever my husband isn't home.

Parmesan Broccoli Balls

Everyone loved these. I served them as a side dish, but they would do well at a party. I thought they were too salty, but everyone else thought they were just perfect. The stuffing is moist and the balls hold together very well.

Simmering Chicken Strawberry Kabobs

Served this for company and just got an ok response. Probably wouldn't make it again. Everyone liked the pineapple, the strawberries got mixed reviews (either love them or hate them) and the chicken was too bland even with doubling the spices. Probably won't make again.

Slightly Spicy Chocolate Chip Cookies

The title is right to call them slightly spicy. I didn't have any cloves, but still didn't think they were any better or worse without the spices. Being in CO, they turned out a little flat so make sure you adjust for high altitude. They were good, but I'll just make the back of the bag recipe next time.

Baked Salmon II

Just a few spices sounds like no big deal, but this really was the best salmon I've ever made. I made it as is and wouldn't change a thing. After marinating the salmon for 1 hour, I just covered the pan with tin foil and baked to make it easier. I made 3 fillets with the amount of marinade and had plenty leftover, but still wouldn't adjust anything next time.

Buffalo Chicken Dip

I was disappointed in this recipe. The buffalo sauce was overpowered and didn't have near enough kick. I made this for SuperBowl. Everyone ate some, but no one wanted to take the leftovers home.

Twice Baked Sweet Potatoes

I omitted the oil and foil step. I also did not add walnuts. I baked at 425 for 1 hour 15 min and still had to microwave them for about 5 minutes to get them soft enough. My husband and I really like this recipe and I will make it again.
