Fig Smoothie

This smoothie gets points for being quick, easy, nutritious, and delicious! My family really enjoyed it. I made it dairy-free by using almond milk (son has a sensitivity).

Gourmet Chicken Pizza

Delicious!!! Husband raves about it. I used Bacon Ranch dressing, added sauted mushrooms, and also substituted half to two-thirds of a drained can of diced tomatoes instead of using fresh tomatoes. Based on another review, I also sprinkled basil liberally over the tomatoes. Made it with Amazing Whole Wheat Pizza Crust from this site. Unbelievable flavor!!

Melt In Your Mouth Pork Chops

I'm giving this 4 stars only because I modified the recipe. With my adjustments, I'd give it 5 stars. First, I sliced my chops lengthwise so that they were thinner. While they were browning, I mixed up the sauce. I was running low on both soy and teriyaki sauce, so I just put in all that I had. It ended up being about 1/8 cup of soy and 1/2 cup of teriyaki. Based on other reviews, I added half of a 15-oz. can of crushed pineapple. I poured the sauce over the browned chops, covered the skillet, and simmered for about an hour and 15 minutes. Both taste and texture turned out great. Husband and kids ate it up! With garlic mashed potatoes and green beans, it was a great meal.

Quick Black Beans and Rice

My whole family enjoyed this dish. I especially love the fact that it's so healthful. I sauteed fresh minced garlic with the onions, rinsed and drained the beans, used only 1 cup of brown rice, and added a little chili powder. The liquid from the tomatoes was plenty for the 1 cup of rice. We added a little shredded cheddar/jack and ate it wrapped in tortillas. Yum!

Roasted Potato Medley

Super easy, delicious, nice presentation, and healthful--what more could you ask! I used Yukon Gold and sweet potatoes, and I followed the advice of other reviewers, decreasing balsamic vinegar to 1 1/2 Tbsp. and increasing chicken broth to 3/4 cup. I also used 1/2 tsp. of dried thyme because I didn't have fresh. I baked for one hour, stirring 2 or 3 times during baking to ensure that none of the pieces on top dried out. It turned out great. Even my five-year-old, who generally dislikes sweet potatoes, loved them in this dish. I can't wait to make it again.

Baked Beef Stew

Wow! This stew had a wonderful flavor. It was a big hit with my family. I did make a couple of substitutions: flour instead of tapioca, and onion soup mix instead of chopped onion. It was delicious. I will definitely make this again. From now on, however, I will leave out the cubed bread. I didn't care for the texture of it when cooked. Otherwise, it was excellent.

Asian Tuna Patties

This is by far the best tuna patties recipe I've ever tried. It's so easy to prepare, and it has great flavor. I substituted crushed seasoned croutons for the bread crumbs, and it worked fine. I also realized after the fact that I'd forgotten to sprinkle the corn meal on the patties. They were delicious anyway. It just goes to show that you can't "mess up" this recipe. Thanks for sharing it, Michelle!
