Cream of Mushroom Soup III
This turned out pretty bland and not very creamy in consistency. I ended up added some xanthan gum to thicken it up at the end, using an immersion blender for a moment to break up some of the mushrooms to release more flavor, and adding a bunch of salt and pepper before serving. If I try this recipe again I will probably modify it even more by adding an onion with the mushrooms, adding salt earlier in the process, and letting it simmer for much longer to let the flavors meld.

Broiled Tilapia Parmesan
This dish has been a staple in my home ever since I found this recipe about two years ago. It's simple in an elegant way, and it always impresses guests. I think my favorite variation I've tried is to omit the lemon juice (just personal taste) and increase the celery salt a bit. I think the celery salt flavor is really interesting and is what makes the dish stand out. Tilapia can be bland if you don't treat it right, and I'd call the celery salt the secret ingredient here. ;) Also, this goes really well with some steamed broccoli. Wonderful, wonderful recipe.

Mulligatawny Soup I
This was SO good! Delicious, Simple, Filling, and Healthy. I made a low carb (well, lower carb) version by omitting the carrot and rice (adding just a little extra chicken and celery instead). I did use the flour since there's so little of it, but I'm pretty sure in hindsight that omitting that would have been fine as well. Apples aren't low carb, of course, but just half of one in a huge soup like this is certainly nothing to worry about for most people. Thank you so much for this lovely recipe!
