My husband and I just finished eating this roast for dinner. We are waiting out Hurricane Sandy and I was hoping that the electricity would stay on until this roast was done. It did and was absolutely delicious. I had a 3lb sirloin tip roast from my butcher and cooked it just an hour at 350 for medium rare. Another thing I did was apply the rub and let the roast come to room temperature about 15 minutes. Remember to slice it thin, a sirloin roast can be a bit chewy. Will make it again.
