I am a stay at home mom of three wonderful children - ages 2 1/2, 10 and 16 - and I have one on the way due 10/6/2012! I have a husband who loves to eat whatever I cook - so he is my guinea pig. All Recipes is my favorite site - I love finding and cooking new recipes. My recipe box is out of control!
My favorite things to cook
I love to bake. So cookies, cakes and pies. Those are probably my favorite things to eat too. And I love to make soups in the winter.

My cooking triumphs
This past Easter I put together a menu and prepared everything on it for 7 adults........garlic cheese grits, fresh green beans and bacon, cranberry spinach salad, rolls, caramel crunch apple pie and a peanut butter ice cream pie. (okay I ordered the ham) This was a first for me and I was a nervous wreck. To my surprise and relief, everything turned out great and was ready at the same time and warm even. ;-)
My cooking tragedies
Nothing too horrible - I was making glazed pecans and I added 1 tbsp. of salt instead of 1 tsp. to the "glaze" mixture - needless to say those got thrown away!

Pumpkin Chocolate Chip Muffins
Just okay. Would not make again. Not as moist or flavorful as some of the other pumpkin recipes I've made. Downeast Maine Pumpkin bread comes to mind. Next time I want pumpkin chocolate chip muffins, I think I'll use one of those recipes and add chocolate chips.

Slow-Cooker Chicken Tortilla Soup
Just okay. Didn't blow me away. Made exactly as stated. Definitely need all the stuff on top to make this good. Sour cream, cheese, chips, avocado.

Blueberry Scones
The first time I made these I added the blueberries to the flour mixture as the recipe states. Then when I kneaded, of course, all the blueberries burst and I had blue scones. Still good, but not very attractive. This time I added after I had added milk / eggs and kneaded VERY gently a couple of times then I added fresh blueberries and VERY gently incorporated them into the dough. They turned out so pretty and not blue! The whole family loved these. So easy and fast. I will make again. I also made a thin glaze with powdered sugar, a little milk and melted butter. :-)
